Best/Favorite LC Recipe EVER - here's mine, what's yours?

I just finally tried this one last night, and it will forever be a staple! I honestly thought that the people who said this was better than mashed potatoes had been LC-ing too long and it had addled their brain or something, but seriously - I like it better. Incredible is an understatement (and it's SO worth getting out the blender/food processor!).

"Mock" Garlic Mashed Potatoes

Ingredients:
1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter
Directions
Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

Garnish with chives, and serve hot with pats of butter.

Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

My favorite is the cream cheese muffins. I've seen the recipe around here for years, but made it for the first time last night. I was fabulous and really killed my desire for sweets.

Mmmmm those "potatoes" sound amazing! I am definately making them tomorrow! My favorite thing to eat on low carb is a blt I found it in my paleo cookbook and it is to die for. You slice a chicken breast in half and fry it up crispy, then add you bacon, mayo, lettuce, tomoato and cheese ... yumm!!

Peanut butter cheese cake bites. YUM!!!!! I don't coat with nuts, just roll and chill. I usually get around 25 balls, roughly 1 net carb each. Such a yummy treat!

Oh dear, this sounds wonderful! I wonder if it really matters what kind of peanut butter you use. I've never tried Carb options brand, but peanut butter is generally low in carbs anyway, right? I think I'll make these tomorrow. Thanks for sharing!!

There are so many -- but my criteria for judging the yumminess of a low-carb food is that it is something that is not already low carb like a dessert or bread that with ingenuity has been made into a low-carb dish. So...

*cream cheese muffins rates right up there, though I now use cottage cheese for half the cheese with no discernible reduction in goodness.
*Chocolate mayonnaise pound cake
*Pizza crust made with Kevinpa's bake mix formula is better, imho, than what we get from the local pizzeria.
*chocolate chip cookies made with almond flour and sf chocolate (recipes abound on this site and in lc cookbooks). DH, who is definitely not on low carb, likes these much better than the traditional white flour cookies, and so do I

Guess the point is, I could go on and on. I am finding that most low carb options have much healthier ingredients and taste better to me. Just had the cauliflower puree last night, btw. DH wanted to trade me his mashed potatoes for them!

I just posted a roasted red bell pepper soup I made last week, as a new post. I think it's my favorite so far. I'm not much of an experimenter, so don't try new things often. This really was well-loved by the whole family. In fact, hubbie sprinkled some of those crushed fried onions (like you put on green bean casserole) on top of his and thought that little bit of crunch just made it.

Gee, there are just too many to pick just one. I suppose the one that has had the most impact on me and my husband, almost life-changing since it has gotten my husband, who hates fish, to now eat fish, would have to me my Oven Fried Fish recipe.

PEGGY'S OVEN "FRIED" FISH:

Unlike every coating I’ve tried doing with flax meal, this recipe really comes out crisp! Even the bottoms of the filets were crispy and brown! This is Induction friendly. Though I mention tilapia and swai below, any mild fish will do for this recipe. If you don’t want to make up the homemade mayo for this, I have used sour cream to coat the fish and this cooks up just as well with sour cream! Though I have not tried it yet, It has been reported to me that this fish, when leftover, reheats in the microwave and STILL STAYS CRUNCHY! Good to know, but I never have any leftover around my house to test that first-hand.

INGREDIENTS:

30 oz. tilapia or swai filets (six filets about 5 oz. each)
6 T. mayonnaise, I use homemade mayo with some shawarma seasoning added
3 oz. crushed plain pork rinds
½ tsp. my Seafood Spice Blend or seasoning of your choosing
1 T. olive oil

DIRECTIONS: Preheat oven to 450º. Rub baking pan with olive oil. Crush pork rinds and place in shallow bowl. Add spice blend and stir well. If you like things spicy, you might want to increase the spice blend a bit. Pat surfaces of fish dry with a paper towel. Then brush each fish filet on both sides with a tablespoon of mayonnaise. Then place each filet into the crumbs to coat well on both sides and lay onto oiled baking pan. Place in hot 450º oven and bake for about 20 minutes or until done and crispy. No need to turn during cooking.

NUTRITIONAL INFO: Makes 6 servings, each contains:

364 calories
22.9 g fat
.43 g carbs
0 g fiber
.43 g NET CARBS
41.4 g protein
338 mg. sodium

Linda Sue's Spinach Lasagna is an EXCELLENT recipe and much easier than it looks. I like to make it with a little Italian sausage added.

SPINACH LASAGNA
1 pound ground beef
2 tablespoons onion, chopped
1/8 teaspoon garlic powder
1/2 cup spaghetti sauce
8 ounces cream cheese
1 egg
1/8 teaspoon pepper
10 ounces frozen chopped spinach, thawed & drained
4 ounces mozzarella cheese, shredded
2 tablespoons parmesan cheese (I used the kind in a can)

Brown the hamburger with the onion; drain off the fat. Mix in the garlic powder and spaghetti sauce; season to taste and heat until bubbly. Meanwhile, soften the cream cheese in a medium-size microwaveable bowl for about 40-60 seconds. Stir until creamy; beat in the egg and pepper with a spoon until well mixed. Blend in the spinach. Spread half of the meat mixture evenly in the bottom of a greased, 8 x 8" glass baking pan. Spread the spinach mixture over the meat; top with the mozzarella, then the rest of the meat. It may not completely cover the top, but that's ok. Sprinkle with the parmesan cheese. Bake at 350º about 30 minutes until hot and bubbly. Or, cover with plastic wrap and vent one corner then microwave on HIGH for 3 minutes; then reduce to MEDIUM and cook for another 7-10 minutes until hot and bubbly. Let stand 3 minutes before serving.

Makes 6-9 servings
Can be frozen

This was originally Dottie's recipe. It is so good I can't make it due to lack of self control.

MUSHROOM CHICKEN AND SAUSAGE CASSEROLE
3-4 cups diced cooked chicken
1 pound pork sausage
1 stalk celery, chopped fine
1 tablespoon onion, chopped
1/2 pound mushrooms, sliced
8 ounces cream cheese, softened
16 ounce bag frozen cauliflower, cooked well and drained
8 ounces cheddar cheese, shredded
Salt
1/2 teaspoon pepper
Paprika, optional

Brown the sausage with the celery, onion and mushrooms. Stir the softened cream cheese into the sausage mixture until well blended. Coarsely chop the cooked cauliflower. Mix all of the ingredients and spread in a greased 9x13" baking dish. If desired, dust the top with paprika. Bake at 350º for about 40 minutes until the top is nicely browned.

Makes 8-12 servings
Can be frozen

This is my recipe. Linda did not rate it very high, but we LOVE it and have served it many times for holidays and company. Very moist and delicious.

JOSIE'S PORK CHOPS ALFREDO
6 pork chops
1 tablespoon butter
1/4 cup oil
1 teaspoon garlic powder, about
Salt and pepper, to taste
8 ounce fresh mushrooms, sliced
16 ounce jar Alfredo sauce
2 ounces parmesan cheese
1/2 teaspoon thyme, optional

Heat the butter and oil in large skillet over medium-high heat. Season the chops with garlic powder, salt and pepper and brown well on both sides. Place in a 9x13" baking dish and keep the oil in the pan. Sauté the mushrooms in the hot skillet until almost tender; scatter over the pork chops. Pour the alfredo sauce into the skillet and stir to blend the browned bits from the pan with the sauce. Add the parmesan cheese; pour over the chops. Sprinkle with thyme, if desired. Cover and bake at 300º for 1 hour. Let rest 10 minutes before serving.

Makes 6 servings


Per Serving: 499 Calories; 41g Fat; 25g Protein; 6g Carbohydrate; 1g Dietary Fiber; 5g Net Carbs

I have been making Dottie's Texas Chili for years! Over and over again. You can play with the spices to your liking.

Dottie's Texas Chili

1 pound ground beef
1 large yellow onion – diced
1 can (14.5 ounce) cut diced tomatoes
1 can (8 ounce) tomato sauce
1 can (14 ounce) beef broth
1 cup water
11/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon ground oregano
1/2 teaspoon paprika
1 teaspoon salt
1 teaspoon ground black pepper
Optional: 1 can (15 ounce) black soy beans –drained and rinsed well.
Shredded Cheddar cheese
Sour Cream

Brown ground beef and onions, breaking up well. Drain well.
Add spices and continue to cook and blend well.
Add the remaining ingredients.
Reduce heat, cover and simmer for at least 30 minutes or until reduced slightly.
Add beans (if using) in the last 10 minutes, just long enough to heat through. Black soy beans have a softer texture than pinto beans and will break down faster.
Add water or more broth if necessary.
Serve hot with shredded cheddar cheese and sour cream.

JUST LIKE STUFFED BAKED POTATOES
16 ounce package frozen cauliflower
8 ounce cream cheese, softened
8 ounce cheddar cheese, shredded
4 green onions, chopped
1/4 teaspoon salt or to taste
1/4 teaspoon pepper
3 pieces bacon, chopped and fried until crisp
Paprika, optional

Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up the florets a bit with a spoon. It's also very good if you leave the cauliflower a little chunky. Put in a greased 8 x 8" baking pan or a 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust the top with paprika, if desired. Bake at 350º for 20-40 minutes, until browned and bubbly. Or, microwave, loosely covered, for about 40 minutes on 50% power, turning the dish after 20 minutes.

Makes 6 servings
Can be frozen

Per Serving: 324 Calories; 27g Fat; 15g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

Lower Carb Cornbread

6 tbsps butter, melted
2 lg eggs
1/4 c heavy cream
1/2 c water
1 drop EZ-Sweetz, 1 or 2 drops, depending on how sweet you like your cornbread (or your sweetner of choice)
15 ozs canned baby corn, drained
2 c Carbquik Baking Mix, or 1-1/2 c. Carbquik, 1/4 c. corn bran, 1/4 c. almond flour

Place a cast iron skillet in the oven with 2 Tbsp. butter and preheat oven to 400ºF.

Whisk together remaining 4 Tbsp. butter, eggs, cream and water in a mixing bowl; set aside.

Puree baby corn in food processor, scraping down sides several times. Add corn and Carbquik to butter mixture; stir until well combined.

Swirl the melted butter in the cast iron skillet to cover bottom and sides and pour batter into skillet. Bake for 22 to 26 minutes, until lightly browned and center is set. Let cool 5 minutes before cutting and serving.

Serves 9 (Mastercook says it has 13 gr. carbs, 6 gr. fiber, 7 net gr. carbs per serving)

SURE! I've used it on tilapia, swai and catfish so far. Haven't tried shrimp yet. Scallops are just too juicy to do this way IMO.

I would probably pick roasted cauliflower, because it's just so delicious. But I'm only 2 months in, so there are so many more fantastic recipes I need to try!
