Low Carb Viennetta Ice Cream Cake Loaf
Not sure how many of you will remember Breyer's Viennetta? It was a fancy ice cream loaf cake that was layered with very thin chocolate shell like goodness. I had some Breyers Carb Smart vanilla ice cream in the freezer and (while I love the chocolate) I was not really enjoying it much. UNTIL...I got this idea, to make a Viennetta like dessert out of it using coconut oil bark for the chocolate layers.
This is more a process than a recipe. It turned out super yummy, though. I simply let the ice cream defrost a bit, lined a loaf pan with no stick foil to make for easier removal and started layering. I put in a layer of ice cream, used fork tines to make little channels in the ice cream, poured some (still liquid) bark mix over that layer and tilted it around until I had decent coverage, then repeated the process. I ended up with three layers of ice cream and three layers of chocolate. Freeze to let it set up, then slice into serving sizes. The carton of ice cream says 12 servings at 4 net carbs. So, I tried to portion out 12 servings, figuring that the bark would add (at most) another carb per slice. Of course, it depends on how you make your bark, but still would have a minimal impact. The nice thing is it would be easy to play around with this, adding nuts, fruit, lc jam, etc... This was very refreshing and the thin crunchy chocolate ribbons made it something special. Very nice for a summer dessert and does not require many ingredients at all. Not quite as fancy as the original, but at 5 carbs I am a happy camper!

It is funny that you bring this up. I used to love those Vienetta thingys! I have been eating my Breyers low carb ice cream with coco bark broken up in it and it is delicious! I mix my coco bark with peanut butter and it is awesome. Cocoa almonds on top are good too!
I am trying to find a chocolate coating for bananas, for my DH. I wonder if it would stay on well enough to roll in nuts and freeze? |

I want to try both. I remember the Vienettas. Yum. I'm going to try your recipe with my dairy free s/f frozen yogurt . Thanks.
