Just had an ooey gooey Peanut Butter cookie for breakfast!
I just made up a really delicious breakfast/snack!!
I love it when cookies come right out of the oven, and even better if they are a little undercooked and ooey and gooey!! So, here is an ooey gooey peanut butter cookie for one!! 2T. PB2 mixed with 1T. water then add 1T coconut oil 1T flax meal 1 truvia packet Microwave for 30 seconds, stir and enjoy!! I'm looking forward to seeing how long this keeps me full! Only 3.5 carbs, so could easily be a snack later in the day too. Hope someone else enjoys it too!!

I have a Jiffy Microwave chocolate chip cookie recipe I'm working on as well; just perfecting it! Great idea!

That sounds good! But NO way that could be breakfast for me!!! A snack, or part of my breakfast, but NOT breakfast! I have to have a real breakfast.
Jen, that micro choc chip cookie sounds good too! |

It is spoonable. Like eating a hot, undercooked peanut butter cookie. Very yummy, eating it right now!!
Great way to get in coconut oil and flax for minimum calories and carbs!! |

Sounds delish!!Now I have to decide between the 2-ingredient chocolate cake or this when I get home. Wait - I'm on an Up Day - I can have both if I want!!!! ![]() |

HaHa!! I hope you like it!
I tried the two ingredient chocolate cake using SF choc. chips. I will need to play around with the time on my microwave because I got it too done for my liking. |

I made this this afternoon, but got mixed up & only used 1 Tbsp peanut powder (not PB2, I have a different kind). So.... It didn't turn out too well. It was good, but I also got too much sweetener (maybe partly because of not enough peanut pwd), so it was sweeter than I would have liked. Will have to try it sometime with the right amount of peanut pwd.
Hmmm, I'm now thinking of replacing that other TBsp pb pwd with oat fiber. Maybe! |

This was pretty good. I tweaked it by adding two tbsp of liquid eggs and a bit more truvia and it set up like cookie after microwaving this. Yummy.
