Fried green tomatoes
Anybody have a recipe that does NOT have cheese? I don't like cheese, and every recipe that I have seen includes Parmesan.

Since I've low carbed I don't use any coating . I just sprinkle with my favorite seasoning then cook in bacon grease.
But if you wanted coating you could use pork rinds crushed up and seasonings. I would proably bake them. This is how I make my chicken finger and chicken nuggets. Hope that helps. |

cheese? We always used cornmeal. It's not very low carb though. It seems like I remember someone saying in a thread here that they used almond meal and it was good.

My universal breading is pork rinds thrown in a food processor and chopped fine. You do have to kind of pick out the large chunks and the hard ones. They make great chicken strips too!

I'll bet you could use the coating for my Oven-Fried Fish recipe to do your tomatoes. I've coated yellow squash, eggplant, onion rings and even okra with it and had GREAT results. Basically it's my homemade shawarma mayo brushed on coated with crushed pork rinds I season with my Seafood Spice Blend.

I will let you know how they turn out. Almond meal might also be an option, as well as the mayo and pork rinds.
