Oh, boy, I just read through this entire thread and I'm just gonna have to try this bread, Ginaaaa! I made the peanut butter bread last year and again recently and I just don't care for that one. The peanut taste comes through too much for me to think of it as bread. But this one with almond butter intrigues me. Glad to see so many are pleased with it.

I made turkey and bacon sandwiches with the almond bitter rolls the last two days at work and it kept me full all afternoon. I usually have to have a snack around three pm. Not after eating these. I love them!! I have to get more almond butter.

You also get better almond butter if you make your own. Mine doesn't separate when I make it fresh. Taste better too.

Where and exactly what kind of almonds do you buy to make your own. I buy an unroasted, all natural almond but it does still have the brown skins. Is that ok? Do you ever use roasted almonds? Or salted? I sure don't want to mess us a bag of almonds by using the wrong kind.

I have used store bought unblanched (skins on) almond butter to make bread and it came out great, so you could use the unroasted almonds with the skins on. I have also used blanched (skins off) almond flour to make this bread. If you go to the first page of this post I talk about how to make homemade almond butter using flour, you can use blanched or unblanched almonds or flour. If using almonds to make almond butter you just grind them up in a food processor or blender until it turns to butter and I would probably use unroasted and unsalted almonds.

Awesome Gina. I love the neutal taste of this bread. And the texture is so spot on.
The peanutbutter ones I didn't like. I've tried it with the flour to make my own with blanched and unblanched almonds . Both are awesome. Now I tried some store bought almond butter when it first came out (this recipe ) and wasn't really impressed. Using the flour to make your own almond butter is better. You'll really love it. |

Ok. So should I use almond flour or raw ubsalted almonds to make my own almond butter? Which would be a better butter and more cost effective.

Here is a banana/nut flour recipe! It's awesome!
Paleo Banana Bread Recipe Video | Pittsburgh Fitness Banana Bread 1 1/2 cup Almond Flour 1/2 cup Coconut flour 1 tsp Baking soda 3 over ripened bananas 3 eggs 1/4 cup Honey 1 tsp vanilla Pre heat oven to 350 degrees. Mix all dry ingredients. Mix all dry ingredients. combine wet and dry ingredients,spoon into baking pan. Bake 45-55 min. |

GLUTEN FREE ONION/RYE BREAD
If you told me a few years ago that I could have an onion/
rye bread made of almond flour and eggs, I would say NO WAY> BUT WAY! After perhaps 8 loaves we are satisfied with this recipe. If you need to be grain free, I hope that you will give this a try. It may not be a beginners recipe but with some patience and love for a hot pastrami sandwich. I'm hoping that you will try it. BARBO Gluten Free Onion/Rye Bread (final version for us) Preheat oven 350F Spray with release agent an 8 1/2" by 4 1/2" baking pan. Place ingredients into the Food Processor in Order that they are given: 2 1/3 c. unblanched almond flour (this makes brown bread) 1/4 tsp. salt 1 tbs. caraway seeds 1 heaping tsp. organic onion powder Process this for about 30 seconds Add: 1/4 c. water 1/4 c. peanut oil Process for about one minute. You will have thick batter Add: 3 extra large eggs 1 tbs. dark molasses Process well, let batter emulsify. Give it some time, you will be able to see it become a thicker batter. You may want to stop machine and use spatula to come up from bottom and stir a bit. Then proceed. Add: 3/4 tsp. baking soda 1 tbs plus 1/4 tsp. WHITE VINEGAR. Process for about 60 seconds. Pour into your prepared pan and bake 35 to 40 minutes. Cool on rack. When COLD turn it out and cut it in half. Stand it up and cut each half into 5 slices. You will have 10 total slices. Refrigerate and enjoy Tips: Have all the ingredients measured out mis en place. If your batter seems too dry, add water, too soft add a bit more almond flour.
