Orange Sesame Pork Stir-fry

Last night I had a craving for some asian food. I noticed I had some orange extract (I had it left over from my cinco de mayo margaritas), so I decided to make some LC Orange Sesame pork. It was soooo good. Here's my recipe:



Low carb orange sesame pork stir-fry recipe

1/2 lb pork butt or leg sliced thin
1 med onion, sliced
2 cups king oyster mushrooms, sliced
1/2 julienne carrot
1 pkg snow peas
2 tbs peanut butter
2 tsp sesame seeds
2 tbs bacon grease (or veg oil)
pepper to taste

Marinade:
1/4 cup soy sauce
2 tbs rice wine vinegar
1 tsp sesame oil
2 cloves garlic, grated
1/2 inch ginger, grated
1 tsp splenda (I used the liquid equiv)
1/8 tsp orange extract

Mix up the marinade in a bowl, add the pork and let marinade for at least 30 mins, but up to over night would be nice. Add one tbs bacon grease to a hot wok. Add mushrooms and stir-fry till golden brown and cooked through, 3-4 mins. Remove and set aside. Add the remaining tbs bacon grease. Remove the meat from the marinade (you could strain it, I grabbed it with both hands and squeezed out the excess marinade – keep the marinade). Add the meat to the wok and fry for 1-2 mins. Add chopped onion. Cook for 3-5 mins until pork is cooked through. Add snow peas and carrots. Pour in reserved marinade into the wok, with the tbs of peanut butter, mix and cover for 3-4 minutes. Remove cover and cook until snow peas are done. Serve.

(This is my first original post, so please forgive any mistakes, let me know what I did wrong and I'll fix asap)

Sounds lovely! I'd be inclined to use real dried orange peel instead of the extract though. Thanks for sharing your recipe!

I agree, but I had it laying around. I think one could easily over do the extract and come out with something very artificial tasting, but I didn't use very much and there was just a nice hint of orange flavor.

Looks amazing!! I always have orange extract around (for my shakes) but never have oranges. I don't buy pork that often but it's going on my shopping list now.

I'll have to get some orange extract though.
Are orange peels carby?
Is the peanut butter an integral part of the dish? I might try it without it. I don't have any and don't want to buy it just for this. I'm not a big fan of peanut butter so I know it won't get used up.

Dried orange peel wouldn't be too carby (you would only use a little bit), the extract is less. The peanut butter thickened the sauce a little and boosted the sesame/nut flavor, you might just want to drizzle a little more sesame oil on top at the end of cooking to get the same effect. Let me know how it turns out!

Thanks! Just remembered I do have a bit of almond butter left so I might try that or leave it out. Will report back when I make it.
