Homemade Caesar Salad Dressing
I had some artichokes that needed to be cooked and some leftover chicken breast that needed to be eaten. So I tried this Caesar salad dressing recipe, and OMG! This stuff is so good, I could just eat it with a spoon. We dipped the artichoke leaves in the dressing, and I tossed some the dressing with a quick romaine/chicken caesar salad. It's very garlicky and intense. Definitely a repeater!

Below is the recipe with my changes: 3/4 cup extra virgin olive oil 3 T lemon juice 2 T parmesan cheese grated 1 egg yolk (I used a farm-fresh egg from my BIL's chickens) 2 cloves garlic minced 1 t worcestershire dash tabasco 1/2 t ground mustard 1/2 t anchovy paste 1 T red wine vinegar 1 t whole grain mustard 1T chopped parsley 1/2 t fresh ground pepper 1/2 t salt Food processor (or blender) method: Using the steel knife, and with the machine running drop the whole garlic cloves and parsley sprigs down the feed tube. Scrape down. Add the rest of ingredients except for the oil. Pulse a few times. Scrape down the bowl. With the machine running pour the oil in a steady stream fairly fast- you want it to thicken some but, not turn into mayonnaise. |

Sounds very good! I wish I could wave my magic wand (now where did I put that thing???) and it would just appear all made up and in a pretty dish. Thank you!
