Pureed avocado lemon pudding- just do it!

I was trying to think of something to have on hand for a "quick dip" when I need a pick me up. I pureed 4 'cados, 1 lemon and some stevia. Viola! Pudding! It's mighty tasty, too. I bet if you added some spices it'd make for a mean veggie dip. Actually, it'd be a good "Green Goddess" type dressing. Oh, the possibilties! And, add some cocoa powder, CHOCO pudding....Homer Simpson drooooooollll. Scratch that, bad idea! What about adding mayo and making chicken salad? And how about mixing with cream cheese and peanut butter to go into a low carb almond crust for a summer pie?

When you puree them it turns very light and "Mousse-y". I'm full after a couple spoonfuls. Good grub.

Sounds good! Trying different types of avocado puddings has been on my list for awhile. This reminded me to give it a try!

How did you puree them? Mash them with a fork, puree in a food processor, or something else?

I make egg salad and chicken salad with cubed avocados, and I bet they would be really good with the avacado pureed.

I use a stick blender and puree them. Zzzzziiiiiiippp and done!

There are recipes for chocolate avocado pudding. I tried it. It was yucky to me. YMMV though.

I love avocado pudding! I've tried chocolate and lately I've been adding a few frozen strawberries instead of cocoa. The strawberry one tastes a little like a smoothy to me.

So I use:

1 avocado
stevia to taste
cocoa powder (approx 2 Tbls)
1 cup (or slightly less) unsweetened almond milk

Or:

1 avocado
stevia to taste
about 4-6 frozen strawberries
1 cup (or slightly less) unsweetened almond milk

Occasionally I add a scoop of vanilla protein powder.
