Copper River Salmon, Oh my Gawd!

Last 3 days it finally arrived here in the Chicago area. If you haven't enjoyed this variety of salmon, it's not to be missed.

Our favorite complement is butter sauteed garlic baby spinach leaves just wilted with a splash of sesame oil and light soy sauce.

Medium rare with the skin toasty brown from a hot buttered skillet 5 minutes skin side and 3.5 minutes on the flip side will prepare it perfectly (season before cooking).

Enjoy for the next few weeks.

Whole Foods had it 1st along with Mariano's. Today it's deep discounted at Costco at less than $10.00 / lb for boneless full fillets....simply heavenly!!!

Sounds yummy. I LOVE salmon cooked any way but especially with butter.

We're fortunate that we live in Alaska and fish off Chitina (dipnet into the Copper River) every year, I'm spoiled by a freezer full of salmon we gut and filet. It is SO much tastier than the mealy, pale stuff that usually passes as salmon. I actually get sick of it, so we only serve salmon once a week or so

It's a real tossup when in season, we devour the Sockeye salmon. Off season, a reduction limited to Norwegian "sashimi" grade varieties, but at a much higher "imported" price point.

I actually don't mind the canned Pillar Rock Red Sockeye salmon as a staple rest of the year.

I know! Is it not the most amazing thing ever??? Our favorite seafood restaurant (Devon) serves it in the most delicious way.... but of course it's in VERY limited supply!

Our neighbor mentioned just last night that he had gotten some Copper River Salmon at our local Hy-Vee and they had it for dinner last night and that it was really good. He paid $25.00/lb. for it!

This is why I love this board. I never had copper river salmon and probably never would have if I hadn't read this post. We had it tonight and DH is now on the phone calling everyone he knows to tell them to go out and get some.

I picked some up on Sunday and we had it last night. So so good

I will go back to Costco today to get more,hopefully they haven't run out! I am spoiled with fresh salmon because I get it fresh and wild caught quite often. But this is some of the best I've ever had!

It was about $30 a kilo at my Costco,a little pricey,but o so yummy

We had Copper River salmon for my daughter's shower several years ago, about this time of the year. It was $3.99 a pound at our local Lowe's supermarket (I kid you not!) for fresh shipped-in-that-day salmon. I had to drive to four Lowe's to get enough filets for 25 people.

Here's what I did: mixed softened butter with fresh parsley, crushed garlic, and salt and pepper and smeared it all over the salmon. Grilled it under a hot broiler. We served it with mango salsa (chopped mangoes, peaches, red onions, fresh jalapeno, a little rice vinegar and olive oil, can't remember what else) Oh how divine -- we are all still talking about it.
