Cocoa Powder- difference in nutrition facts?
Does anyone have any info on this. I'm really not bothered by the cals. Just curious why the nutrition facts are so different from my Hersheys or Trader Joe Cocoa Powder. I'm on the hunt for a good cocoa powder to bake with and got this today.
What I have is World Direct Organic Natural Cocoa Powder Label says 100% Natural cocoa powder 10-12% fat content For gourmet cooking,baking and dairy Nutrition Facts Serving size 1 oz Calories 105 Total fat 3g Total carbs 13 g Dietary Fiber 9 g |

I don't know why the nutrition facts are so different. Of course, the fat content directly affects the calorie scount and probably helps the carbohydrate count. And I know the fiber varies. But you are right. The nutrition amounts are all over the place. I use Hershey's spcecial dark. It says 10 calories and 1 carb. That may be too good to be true.

I was curious so I checked the counts that are in MasterCook for cocoa and now I'm really confused. The counts in MasterCook are pretty much identical to the ones on the USDA site yet the numbers don't add up. The USDA says that 1 ounce of cocoa only has 65 calories yet the carbs alone add up to 64 calories. When I add in the fat and protein, I come up with 124 calories per ounce. All this time I had no idea that I was calculating it wrong. Your Trader Joe's label seems to be more accurate than the USDA site or at least their numbers add up correctly. Even if the USDA isn't counting the calories in the fiber, it still adds up to 88 calories, not 65. Screwy numbers like these make it almost seem pointless to bother calculating the nutritional values.

Cocoa powder is far from a homogenous substance and how it is processed has a lot to do with what it's nutritional values are. I find that I much prefer the "dutch" cocoa powder (more alkali) since it dissolves much better.
