Cheddar Bacon Dip aka Crack Dip.
I don't know if this has been posted here before or not, however, I will share it.
I use it to dip Pork Rinds or veggies in and let me tell you, there's a reason people say it's like crack. 16 ounces Sour Cream 3 ounces of bacon bits, I use real bacon crumbles, whichever you prefer to use. 1 Cup of shredded cheddar. 1 Packet of Ranch Dressing mix or enough to suit your taste. Stir all ingredients together and refridgerate until time to eat. The above recipe is the ORIGINAL recipe from the site my wife got it from, however, she cuts down on some of the cheese and ranch seasonings to save me some carbs and I still love it! For the crunch of Pork Rinds and having a dip to eat it with.. it really fills a gap in the 'junk' food I used to love... chips and dip. Let me know what you think about it.. although it's a very easy thing to make.. you would be surprised at how great it is. Even non low carbers adore it. We made it alot this past football season and none was ever left.

I haven't thought about the yogurt idea, but sounds like a good idea. Let me know how that turns out.
You wouldn't think just looking at the recipe that it would turn out very thick, but it does get pretty thick when you put the ingredients in it. Greek Yogurt.. love the idea. |

Buhhhh, that sounds amazing. I absolutely adore sour cream. I bet you could add some sliced green onion for a little crunch and freshness too! Mmmm. Thanks for sharing!

OK now that I am back home from house sitting I have everything I need. Will use real bacon since I don't have bacon bits. I bought 12 pounds of bacon the other day so i have a little to spare!
I will also mix sour cream and mayo together instead of straight SC. |

That dip sounds amazing!! and it sounds like it would go good with regular potato chips. I know a big no no, but I gotta be honest...

I just tasted it after it sat for a bit in my fridge....yum!!! Love this!! I made it as it was posted in the thread, just using real bacon pieces I chopped myself instead of bacon bits.

I just wanted to say I made this dip without the cheese..because I am not much of a cheese lover....and I made real bacon and crumbled it in...and what I did was put a bunch of chicken in it to make a bacon ranch chicken salad.. and OMG...it is wonderful!!!
Thanks ever so much Coots, for posting this recipe!!! |

I made the chicken salad version (see post #19) including green onions and shredded cheddar cheese for a Labor Day picnic. This was very good! I'm glad I brought it too, because the rest of the food at the picnic was carb heavy! It disappeared quickly - I wanted to yell at all the non-LC people "stay away from my salad and eat the carby stuff that you brought!" But I didn't . . .
I'm looking forward to trying the recipe as a dip next time. |
