Almond Butter Cheesecake

This no-bake cheesecake goes together really fast! It is very creamy, rich, and delightful with strawberries or fresh cherries if you have them. I buy my large canister of Emerald Cocoa Almonds at Sam’s, but you may be fortunate enough to find them at your local grocery store. These nuts crushed up make a delightful bottom crust and top coating for this no-bake dessert. This cheesecake is not acceptable until the nuts rung of the Atkins OWL ladder. If you have it on hand, and you’re of a mind, a splash (1-2T.) of Amaretto or Kirschwasser would enhance this dessert greatly.


INGREDIENTS:

˝ c. (2 oz) Emerald roasted cocoa almonds
24 oz. cream cheese, softened
1 c. heavy (whipping) cream
50 drops liquid sweetener (small bottle EZsweetz), or 2 c. sugar equivalent
˝ c. water
1 envelope Knox unflavored gelatin
1˝ tsp. almond extract
2 T. almond butter
1-2 T. Amaretto or Kirschwasser (optional)

DIRECTIONS: Process or crush cocoa almonds until evenly crumbly. Spread all but 1 T. (for topping) onto the bottom of a pie plate as evenly as possible. Place softened cream cheese into large mixing bowl and whip until smooth. Set aside for a moment. Place water in a small saucepan, sprinkle gelatin over the water and heat on medium heat until gelatin is completely dissolved. Pour gelatin over softened cream cheese and whip with hand mixer until creamy. Add in almond extract and almond butter and whip another couple seconds until well blended. In a separate bowl, whip whipping cream until thick. Gently fold that whipped cream into the cream cheese mixture. Now gently dip up the filling mixture and gently place atop the crumb bottom crust. Try not to disturb the crumbs any more than is absolutely necessary. Smooth the top or the cheesecake with a rubber spatula or spoon. Sprinkle the reserved tablespoon of crushed cocoa almonds over the top and chill for 3-4 hours. Cut into 8 pieces and serve with or without cherries or strawberries for garnish.

412.6 calories
38.7 g fat
6.0 g carbs, .9 g fat, 5.1 g NET CARBS
12.4 g protein
296 mg sodium
245 mg potassium
48.6% RDA Vitamin A, 19% B12, 21% E, 14.5% copper, 20% iron, 20% phosphorous and 22% riboflavin

I think you ladies will like it. I thought it had a real good taste. I may even increase the almond butter next time to see if it like more in it. It's not terribly sweet, either. I'm really not liking my desserts too sweet these days.

Here's the nutritional info for them which matches what's on my container: Calories in Emerald Nuts Cocoa Roast Almonds (Dark Chocolate) - Calories and Nutrition Facts

I figure with only 1 gram sugars listed, there can't be MUCH modified food starch in the coating. That's probably where that gram comes from, in all likelihood.

INGREDIENTS: Roasted almonds, modified food starch (potato), natural and artificial flavors, cocoa powder, salt, acesulfame potassium, sucralose.

When my husband got home from Austin last night, he gave this a two thumbs up. Really liked how rich it was. And he usually doesn't go gaga for my low-carb desserts.

Oh Peggy! Oh I can't make this for at least 3 weeks - working double and going to a conference for a week and I don't see how I can wait!!! My favorite flavors together and no baking or water baths or cracking. Oh my. Wow.

Dang it, I was going to make this today and then realized I had forgotten the almonds and the almond extract. Kinda important. Guess I will swinging by the store tomorrow.

And holy moly, almond butter is EXPENSIVE!!! The cheapest I could find was $6.50 for like, 4 oz.

Do you have a Trader Joe's? I got a 16oz (1 lb) jar for $5.99.

I bought mine at Walmart and don't remember the price off the top of my head. I do however remember it was a lot more than the Laura Scudder's peanut butter I buy there. Sadly, we don't have a Trader Joes, Whole Foods, Central Market, or any really interesting food stores here. I have to drive down to Austin for unusual foods....or order on-line.

Thanks for the cocoa almonds info. I've never seen the Emerald brand . Trader Joe's used to sell a version of them at Christmas. I haven't seen them the last few years.Guess I'll just have to make some myself. Trader Joe's was out of peanut butter so I bought almond butter instead, so glad I did!

I was in Walmart today and the Mara Natha brand of almond butter they sell was $3.98. It does have 3 g. sugar in it, though. You might be able to make your own in a food processor. I've never tried that, actually, but may next time I need some.

I went back and checked the jar I bought, and it was actually 11 oz., not 4.

It just looked so SMALL.
