Coconut Flour Pancakes! *Pic*

I made some delicious coconut flour pancakes tonight and thought Id share

Ingredients

2 eggs, room temperature
1/2 cup milk (I used SF Vanilla Almond Milk)
1 Tbsp. HWC
1 teaspoons vanilla extract
2 Packets Splenda
1/4 cup coconut flour
1/2 teaspoon baking Powder
1/4 teaspoon sea salt
coconut oil or butter for frying

Preheat griddle over medium-low heat. In a small bowl beat eggs until frothy, about two minutes. Mix in milk, cream, vanilla, and splenda. In a medium-sized bowl combine coconut flour, baking powder, and sea salt and whisk together. Stir wet mixture into dry until coconut flour is incorporated.
Grease pan with butter or coconut oil. Ladle a few tablespoons of batter into pan for each pancake. Spread out slightly with the back of a spoon. The pancakes should be 2-3 inches in diameter and fairly thick. Cook for a few minutes on each side, until the tops dry out slightly and the bottoms start to brown. Flip and cook an additional 2-3 minutes.

Serve hot with butter, coconut oil, or Sugar Free Syrup!

For entire recipe (made about 5 pancakes)-328kcals, 16.8g protein, 18.9g fat, 24.9g carbs, 12.5 g fiber, 12.4g net carbs, 1000mg sodium

I have tried protein powder pancakes as well as almond flour pancakes and was never thoroughly impressed. These were sooo good and tasted just like their starchy counterparts

The picture doesnt do them justice

Thanks for the recipe. I like that it uses coconut flour. I'll be trying these pretty soon.
