Now I want donuts! Well, actually I don't because I am not recovered from yesterday, but soon I will want donuts, lol! And I have a mini donut pan that I haven't used for awhile.

Those donuts look marvelous and I do have a mini-size and regular-size electric donut maker. (I'm a cookbook and kitchen appliance hoarder, LOL)
I bit the bullet and ordered some Tagatose to try plus some pea protein powder. |

Yes they do. I had 4 HC people eat these without me saying anything.
They said wonderful. These are not as cakey. Very buttery it is so close. I think we are on the verge. |

I just put in an order for erythitol, tagatose, stevia, powdered-e and Nectresse. I like the Nectresse and am going to attempt to combine E with tagatose and stevia and a touch of molasses to try to mimic the Nectresse. I don't really do much, if any, LC baking but the original recipe here has got me experimenting again. And those Valentines donuts!! Yeah, the powdered E is for that recipe!!!!
I am a little fearful of the tagatose. I understand some have gi issues with it so it will only comprise 1/3 of my blend to hopefully decrease any problems.

I use pea protein rather than whey in my mix. I thin pea protein makes it moister.

I ordered a Babycakes Cake Pop maker just to make the donut holes. OMG, totally worth it! I used buttermilk in them, as Gina suggested, and they had this lovely little tartness to them. I added a titch of Sweet Dough Buttery Bakery Emulsion (bought from KAF on Birgit Kerr's recommendation) and it brought the donut holes into the realm of the divine. I love cake donuts and no one, I repeat, no one could have convinced me that these were not the high carb ones! Going out to buy a donut pan this weekend!

Here is the recipe. These cookies are just slightly cakey.The mouthfeel is amazing. They just love them. I love them. I didn't use egg white powder because I thought that is what was giving me cakey cookies.
Chocolate chip cookies 1 c. mix ( no egg white powder & no sweetner) 3/4 c. blanched almond flour 1/4 c. corn resistant starch 2 eggs 1/2 c. powdered Xylitol 1/2 c. brown diabeta sweet 1/4 tsp. liquid sucralose 1 c. butter 1 c. chocolate chips almond milk Cream together butter & sweetners light and fluffy, add eggs, cream well. Put dry ingredients in bowl and whisk to make airy. Combine the dry ingredient ( a third at a time) to the wet ingredients. Add enough almond milk to get a cookie dough. Add chocolate chips. Bake @ 350 for 12 mins. These cookies are to die for.

I've been out of town and haven't had a chance to do any experimenting with this wondrous mix - but I did prepare a huge bag of it to take on my trip, and made myself a little cake with it almost every day. I stuck to simple, 1/4 cup mix to 1/4 cup DaVinci and a splash of almond milk. The cake turned out beautifully every time, even though I used different microwaves. I hope your manufacturer can help you bring this to market Ouiz!

Esther - I just looked at those cookies again - is the first pic chocolate chip cookies or peanut butter? - they look like peanut butter cookies to me. If not, I think your recipe could be adapted to them, I may give that a try also.
And one last question, how many cookies did you get from your recipe? TIA |

They use to have a make offer button on a lot of thier auctions and they never turned down any offer I made but I don't see that option now. I did bid on one of their listings the other day for a 8oz bottle of liquid sucralose and was outbid but they sent me a second chance offer for my original bid amount which I took. |
