Nutritional Info on the Flour Mix
I ran the numbers on the basic mix using a tracker loading with NOW unflavored whey protein (not vanilla), NOW eggwhite protein, and Let'sDoOrganic coconut flour and this is what I get for the entire basic mix recipe in Post #1. Bear in mind her little recipe makes about 1/3 c. and many of you are making multiple recipes of the mix and then measuring out only 1/4 c. of the mix for a muffin, so what you're getting is about 1T. (1/5)less mix and therefore 1/5 less on each of these numbers. Then you have to add the carbs for whatever you put in/on the recipe for flavorings, like fruit, nuts, coconut, syrups. (NOTE: be sure you deduct the 17 g. fiber shown to the left of the pie chart, reducing it to 3.9 NC for the entire recipe of mix as written by Ouizoid in Post #1, no tweaks)

question peggy--I don't use eggwhite protein powder in my recipe. I use regular powdered eggwhites. Is it a different product? powdered eggwhites are 22 calories per TBS. I'm also wondering if using eggwhite protein changes the outcome in some way?

Thanks, Sharon. Using this stuff sure is easy. I made a blueberry "muffin" with 2 T. blueberries this morning. Used 1/4 c. mix, 1 T. vanilla syrup (I don't like things too sweet since doing my Whole30 challenge), 1 T. cream, 2T. water for my liquid. Darn good, too!
Ouiz, the NOW brand label says the only ingredient is eggwhite powder and it has 75 calories per 1/4 c. or 18.75 cals per Tbsp. So I suspect it's the same thing. Ouiz, I just changed the cals to read 18.75 cals per Tbs. (not tsp). I'm not fully awake yet. So that makes it only 6.25 cals per tsp. This brand would be great for JUDDD & other calorie counters!

Those donut holes look amazing and I just so happen to have a brand new cake pop maker that I haven't even had a chance to take out of the box. I bought it after reading about Gina's ebelskivers in a different thread but haven't had the time or motivation to try it out. I also bought an electric ebelskiver maker (I have such an addiction to appliances and cookbooks,
Hoping to get back on track soon and start trying out some of these recipes.I have also been reading everything I can about food stabilisers and trying to find a better price on a book by Alan Imeson called Food Stabilisers, Thiickeners & Gelling Agents. It is really educating me on how different stabilizers work in different environments and what the best ratio is. P.S. I've seen the cake pop maker at Big Lots at a really good price. |

Here's what I got when I tripled the dry ingredients and then tripled again.
Fantastic Flour Mix X 3 1/4 cup + 2 tablespoons Oat Fiber 1/4 cup + 2 tablespoons Coconut Flour 3 tablespoons Protein Powder 3 tablespoons Egg White Powder 1 1/2 teaspoons Baking Powder 1 1/2 teaspoons Glucommanan Fantastic Flour Mix X 6 Fantastic Flour Mix 1 cup Oat Fiber + 2 tablespoons Oat Fiber 1 cup Coconut Flour + 2 tablespoons Coconut Flour 1/2 cup + 1 tablespoon Protein Powder 1/2 cup + 1 tablespoon Egg White Powder 1 tablespoon + 1 1/2 teaspoons Baking Powder 1 tablespoon + 1 1/2 teaspoons Glucommanan This is the post for the larger batch, but it is 5 times, not 6 times the original batch |

I need correction, I am positive.
Original recipe: 2 Tbs Oat fiber 2 Tbs coconut flour 1 Tbs protein powder 1 Tbs egg white powder 1/2 tsp baking powder 1/2 tsp glucomannan powder - - - - - 2 Tbsp. x 6 = 12 Tbsp. = 3/4 cup oat fiber ? 2 Tbsp. x 6 = 12 Tbsp. = 3/4 cup coconut flour? 1 Tbsp. x 6 = 6 Tbsp. = 1/4 cup + 2 Tbsp. protein powder? 1 Tbsp. x 6 = 6 Tbsp. = 1/4 cup + 2 Tbsp. egg white powder? 1/2 tsp. x 6 = 1 Tbsp. baking powder? 1/2 tsp. x 6 = 1 Tbsp. glucomannan powder? - - - - So for the original recipe x6 are the amounts above correct? Help!

I LOVE this mix Ouizzy!!!!!! My donut holes are as light as a feather.
I used Ouizzy's recipe from post #1. Ouizzy mix 016.jpg The liquid I used was 1/2 water and 1/2 raspberry Davinci syrup. I added to her recipe mix. 1 T. cocoa ( next time I'll use more.) 1 T. more of powdered erythritol Then drop by T. into the cake pop maker.I got 8. Mine are frosted. Here is my cake pop maker Ouizzy mix 013.jpg This is my steal for $4.22 on clearance. Peggy Thanks for the work you did. You are the greatest!!!!

Everyone who has contributed to this thread is THE BEST! Some wonderful ideas with more to come! Now if someone could just do a nice yeast bread out of it, I would be good to go! I've had pancakes, cake, muffins, my cinnabon, cookies, grilled cheese, pancakes, waffle, cupcakes, biscuits, banana bread, brownies, and piecrust- all with variations of this mix. Makes. Me. Happy. I made a little cookbook for myself so I don't have to go through the threads. How long did you bake yours?

I did the numbers for 1/4 c. of the mix as written in post #1 . Since 1/3 c.=5T. (amt. the recipe makes) and 1/4 c.=4T. (amt. most of us are using in our recipes), that is 4/5 of the original recipe. So taking 4/5 (.8) of each ingredient's macronutrient value in my chart above, this is what I come up with. 1/4 c. Ouiz's Flour Mix = 75 calories, 2.56 g fat, 13.6 g fiber, 16.8 g carbs, 3.2 NC, 6.4 g protein Hope this helps folks using just 1/4 c. mix per recipe. Don't forget to add in whatever flavorings you're adding. |

If people are using different amounts, it could make a difference in how the recipe turns out. |

You guys are really killing me here!!! I don't have glucomannan powder or egg white powder so I still haven't made this mix yet, but I drool at every picture that's posted!
I'm going to order those two items soon but I really want to try something now. Do you think I could use whole egg powder and xanthan or guar? If so, would I use the same measurements as for the correct ingredients? I really, really want to make something! |

I didn't really time them but I would say about 3 or 4 minutes maybe? I did turn them over to get a more even color on them. So I probably cooked the first side for about 3 minutes and then another minute for the other side. I was really happy with how they came out in it and now I'm thinking about making muffins in my pie maker.
