LOL! I know Linda, right? And it was only a 2 egg omelette too! I wish I could figure out why the images uploaded to Photobucket don't come in as thumbnails any more that you click on to expand! I just don't have time to futz right now.

Barbo sorry to be away so long! I will be sure to come visit soon, I promise! Your dinner idea sounds wonderful!!!!! I adore nekkid potstickers and have pork in the freezer that needs to be used soon, so they may make an appearance soon!

(Note - Who says you can't have Garlic Cheese Grits on low carb!?! LOL, just look how creamy and "gloopy" that bite is and tell me, would you feel deprived on this diet? Now please understand, I'm not a typical Inductioneer, I don't think? Because of a liver injury I have to limit my protein or else I have to deal with smelling ammonia all over and I feel crummy when that happens. And because I'm post menopausal and have trouble losing, I also watch my calories WAY more than any of ya's should have to watch them - especially on Induction! So just know that it pays to "know" what YOU as an individual can and can't handle when it comes to dieting!!! Cheers!)

Day 4 Poopy Report

Weight – 233.8lbs (That’s ok, the earth moved and it’s just fluid retention from the cheese)

(I went in to greater detail on the blog but won't bore you guys here in the recipe area. I would rather keep this area for food piccys and recipes!)

Day 4 Breakfast



3 c. Decaff Coffee, black, unsweetened
3 Egg Foo Young Patties, sauceless
1 tsp Sambal Oelek



EFY is so easy, you don't need a recipe really. Just fry up some veggie guts and add meat if you want. Sausage works great as does any leftover meat!!



Now combine that cooked filling with beaten egg, soy sauce or coconut aminos, ginger, garlic, SNP (salt n peppah) and cook it like a pancake on both sides! Serve with a little sambal oelek and oh my, the Asian-American breakfast of champions!

Pooticus, thank you so much for sharing your meals with us. My husband and I are just finishing a 2 week induction, will probably extend it longer. Your menus and photos are fantastic. Love the shrimp and grits! Are the grits grated cauliflower? I made zucchini cakes last night, will try the egg foo young next. Yum!!!

Mojave - Once you get the hang of balancing out your 20g of net carbs per day, it's pretty easy and tasty, right?!

Yes the grits are actually cauliflower. I use the food processor to pulse them down to grit size. I also make risotto with it and also make cous cous as well. Different cooking methods for the grits, risotto and cous cous - even Southern Fried "Corn", than you do for things like mashed cauli and cauli soup, etc. But you will just have to come hang with me and read about it as I post the recipes!

The EFY is totally easy and bombastically delicious! No recipe really. Just tuck in anything you want. There are lots of LCFers who've got recipes for it. So good!

(Note: So it needs to be said, I'm not "trying" to keep my calories this low. They are just a result of the foods I tend to be attracted to on most days. I think it's important to eat the food you love and be done with it. As an Inductioneer, you of course, will most likely be eating WAY more protein - maybe as much as 40-50g more of protein per day. I'm a protein anomaly I think. Because of the ammonia smell, I backed off the protein by around 20g to the low end of my daily protein requirement and I upped the carbs for the day just a smidgeon to take care of hunger. They were very low glycemic carbs so I wasn't too worried about 3-4g of extra net carbs. I should have raised the fat too in order to get more calories in for the day, but I didn't see that until too late and I simply don't believe in eating spoons of plain fat for the sake of eating fat. Some do. I just don't. I know my body and try to listen to it.)

So I met Linda Sue for lunch yesterday at Cheeburger Cheeburger and had a great time and a yummy low carb lunch! She had the bunless burger and made it into a Fiesta Burger! Ole! I had the Chicken Portabello Mushroom Salad and brought my own dressing cuz all storebought dressings and most restaurant dressings have soybean oil in them. Boooooosiiissssss!

We had a great visit and very filling and healthy food to boot! What's not to love? It's all about the love! I posted great piccys online of the festivities. Keep in mind, the WPP (Witless Protection Program) is ruthless and made us refrain from snapping candid photos with out mouths full! Bummer.

Also, Cheeburger Cheeburger gave me a great gift carb $20 for one of the giveaway presents at my drawing on May1!!! Yippee! They have locations all over the US. So some lucky blog follower will win it!

Day 5 Menus and Recipes

I'm afraid this will be a boring day for you all. I fast on Fridays and do a meatless dinner for religious reasons. Fasting - it's not part of Induction - but it's not just for Lent and Passover either!

I will try to post my dinner meal tonight after dinner instead of making you wait til tomorrow! I was going to make my version of the Revolution Rolls as hotdog buns. I have some interesting hotdog bun pans I want to check out. Then we were going to have Hotdogs made with Boar's Head Frankfurters and homemade Turkey Chili I discovered on an expedition into the freezer. I woulda used ugly green beans or "oven fried zucchini" for fries tonight. I may just end up doing that with fish instead! Sans chili of course...lol! *snort*

So let me think about the menu and I will get back to you guys!!! Hasta la vista Baby!

LowCarbChik! Thanks so much! I got the Finlandia pattern china back during college. I hesitate to tell you how many years that's been! I may still be payin' for it on my credit card, come to think of it!

Linda, Denny chose the lamb chops. We did end up getting a package of the Boar's Head hotdogs. Been so long since I had one. I wanted them for dinner then remember it's Meatless Fasting Friday and God won the coin toss for tonight's menu! Hehe.

We'll have the dogs tomorrow with Freezer-Diving Leftover Turkey Chili with cheese and onions and Oven-Roasted Ugly Green Beans tomorrow night. Or maybe I will make Zucchini Fries since I think we're having the Ugly Green Beans tonight!!!

Had an awesome visit with you. It's been too long. Hopefully we won't have to wait another year to get together!

Ok, I finally got Day 6 Blog Post up and it has lot's of piccys lol! Sorry it took so long. I was just so beat. I still have those days where I can hardly stand or keep my head up. So it was a BIG leftovers day! The only thing I did do was experiment with a batch of Revolution Rolls. Then I was completely wiped out. I didn't even make dinner until 9:45pm last night!

Ok, here's yesterday;

I’m slightly annoyed to not have a big “whoosh” like many people experience during Atkin’s Induction. I think I know why. I’ve been following an intermittent fasting style of diet called JUDDD (Johnson’s Alternate Day Diet) which features eating nutrient dense, calorie restriction on one day followed by a day of eating to satiety at a much higher calorie level.

The JUDDD diet is not designed to be a low carb or controlled carb diet. It’s a calorie restriction diet. But I’ve been following it as a lower carb diet. Not as fully low carb as I used to do on it and certainly not as low as Atkins Induction. Maybe I’m already glycogen depleted and in ketosis from JUDDD? If so, then I wouldn’t have a big whoosh of initial water weight loss.

Maybe I’m losing slowly, because I’m actually eating more calories than I have been eating on JUDDD? I average about 1000cals/day averaged over a week on JUDDD. Because of poor post-menopausal metabolism I have to keep calories very low in order to lose. I was interested in seeing if Induction could speed that weight loss up. I don’t see that happening.

OK, well without further ado, here’s the Day 6 Menu. (Sorry to be a day late reporting in, I was just beat yesterday and couldn’t get my post together!)

Here's Day 7 Report.

I will keep it short. There are tons of recipes to be posted. I will try to do some of them now. But more will have to come tomorrow.

No comments other than I refuse to get wigged out of shape by the scale jump. This is not a shocker, nor is it new. My pattern during the 80lbs of weight loss has been to lose, then bounce, then lose and bounce, rinse and repeat. It's just more of the same, different day. Different year.

It's physically impossible to eat 1100 calories in a day, walk, and carry around 233 lbs and gain physical weight overnight. Impossible.

I'm very certain it has got to be all the sodium in the cheese and the quantity of cheese eaten yesterday. It will come off. As of the end of Day 8, I'm down to 234.0lbs. Still a pound up, but it's the end of the day and end of eating for the day. No biggie.

Oh and the magnesium in the spinach and salad greens worked! Wooohooo! Thah crahps ah say-uv-ed!!!!

Pico de Gallo

Serves – 2
Prep Time – 10 Minutes
Cook Time – None
Difficulty – Easy



Ingredients
8 Grape Tomatoes
1/4c Red Onion, chopped
1 Jalapeno, fresh, chopped with seeds
1/8 c. Cilantro, chopped
½ tsp Lime, zest
1 Tbsp. Olive Oil
1 dash Black Pepper, freshly ground
1 dash Kosher Salt
2 wedges Lime, juiced

Cut grape tomatoes lengthwise, then into thirds. Each grape tomato makes six segments.

Mince garlic.

Finely chop onion and cilantro.

Combine all ingredients in a bowl. Stir well.

Serve immediately.

Ingredients
6 Tbsp. Cottage Cheese
6 Tbsp. Whey Protein Powder, Natural Flavor
3 large Eggs, whole
1-1/2c Mozzarella Cheese, Part Skim, shredded
1 Tbsp Olive Oil
1 Tbsp Apple Cider Vinegar (Bragg’s)
1 tsp Baking Powder
2 tsp Parsley, dried
¼ tsp Granulated Garlic Powder
¼ tsp Onion Powder
1 pinch Kosher Salt

Grate cheese.

Combine all ingredients and mix well.

Line the bottom of 4oz. ramekins with parchment.

Stir before ladling either 2 or 3 tablespoons of batter into each ramekin.

Microwave on high for 1 minute. You can microwave up to 2 ramekins at a time. (If you are microwaving 2 ramekins at one time, you may need to add 10seconds to your time.)

Once cheese biscuit is done, remove from ramekin and place in non-stick sauté pan. Heat pan on medium high heat and allow cheese bread to toast on each side, about 2 minutes per side. You can toast multiple rounds in each batch. Bread will not run or smear. Also, there’s no need for any added oil when toasting!

Blot any extra oil or moisture from surface of toasted Induction Bread. Serve hot.

These can be made ahead and re-toasted or toasted as you use them. Refrigerate any unused bread.

One or two bread rounds make a meal.

Variations –
Mexican “Corn” Cake
Add 1 Jalapeno, fresh and finely diced
Add 1 Tbsp Cilantro
Add 1/8 tsp Cumin
Add 1 pinch Coriander, ground
Replace 1/3 of the mozzarella with sharp cheddar to make a spicy version.

Cinnamon Biscuit
Omit all savory spices but keep the Kosher salt
1 Tbsp Brown Sugar SF DaVinci
1/2 Tbsp Vanilla DaVinci
1 tsp Cinnamon
2 Tbsp Truvia or EXS Mixture (EXS=Erythritol, Xylitol, Stevia), granular

Add DaVinci syrups to batter. Once bread is cooked in the microwave and toasted, sprinkle hot toasted rounds with a mixture of cinnamon and sugar substitute. This is great with bacon or fried ham! They also taste great with SF Maple Syrup. Or simply spread with your favorite jam or SF Pumpkin Butter.

(Note – I first saw the inspiration for this recipe in the old Atkins DANDR book. They called for soy protein/flour and left the recipe a little plain. Being the tweaker I am, I omitted the soy and replaced it with Whey Protein (Concentrate or Isolate, doesn’t matter). I spiced the batter up a bit and voila, Induction Bread!

I like using 2 Tbsp of batter per ramekin. The bread is thinner, but still makes a good platform and FUN-ctional food and delivers your choice of toppings! You save a few carbs and a few calories if you’re one that needs to watch the cals as well as carbs.

Get daring and make up your own versions with different spices or savory elements.)

Cinco de Mayo BOB (Breakfast On a Bun)

Serves – 1 BOB
Prep Time – 1 Hour
Cook Time – 5 Minutes
Difficulty – Easy







Ingredients
2 Induction Bread Rounds
¼ Avocado, sliced
2 Tbsp Pico de Gallo
1 Egg, fried
½ tsp Olive Oil
½ oz Cheddar Cheese
1 patty Turkey Pan Sausage, pre-cooked (Jimmy Dean)

Heat and brown turkey sausage patty in non-stick skillet. Toast Induction Cheese Bread rounds in the same pan as the turkey sausage. Remove when both are browned.

Add olive oil and fry egg to easy over or sunny side up. Leave the yolk runny!

Top one cheese bread round with cheddar cheese and the other one with the browned sausage patty. Brown in toaster oven until cheese is melted and sausage patty is heated through. Bring both halves to plate.

Add the sliced avocado and pico to the bread and cheese side. Add the fried egg to the side with the turkey sausage.

Serve while hot.

Simple Chunky Guacamole
Serves – 8
Prep Time – 10 Minutes
Cook Time – None
Difficulty – Easy



Ingredients
2 Avocadoes, ripe
1/3 c Onions, chopped
1 Jalapeno Pepper, chopped
2 Tbsp Cilantro, chopped
1 clove Garlic, chopped finely
1 Tbsp. Olive Oil
2 dash Black Pepper, freshly ground
2 dashes Kosher Salt
2 wedges Lime, juiced

Cut avocadoes in half and remove the seeds. With a dull knife, score avocado into ½” cubes. Scoop out pulp with a large spoon and place in a bowl.

Combine with all other ingredients. Mix with spoon, lightly mashing pulp of avocado but leave it mostly chunky.

Serve immediately, but it can be made up to 2 hours ahead.

If not serving immediately, cover the surface of the guacamole with plastic wrap. Make sure to remove all air to avoid the avocado turning brown. Refrigerate and serve within 24 hours.

Induction Enchiladas
(This is an Un-Recipe)
Serves – 2
Prep Time – 10 Minutes to 3 Hours
Cooking Time – 30 to 40 Minutes









Ingredients
2/3 c. Turkey Chili Juice
2 Tbsp Pork Rind, crumbs
4 Revolutionary Crepes**
2 oz American Cheese or a mixture of Cheddar and American
2 oz Cheddar and Monterrey Jack Cheese, shredded
1/2c Onion, chopped
Garnish – 2 Tbsp Sour Cream or Mexican Crema (optional)

Make a batch of your favorite Turkey Chili and use leftovers to make this enchilada dish.

Make a batch of Revolutionary Crepes*.

Take one crepe and place ½ oz American cheese or cheddar mix along with ½ Tbsp chopped onion. Roll crepe and place seam side down in shallow casserole. Repeat with the remaining 3 crepes.

Loosely strain chili with a slotted spoon. You want mostly liquid and a few bits of meat. Use ground meat for other applications such as chili dogs. Thicken chili gravy with ground pork rind crumbs and allow to thicken slightly.

Pour chili gravy over filled enchiladas. Top with grated cheese.
Bake in 350* oven for 30-40 minutes or until cheese is bubbly and heated through.

Remove from oven and allow enchiladas to sit for 5 minutes before serving. Serve 1 to 2 enchiladas per person. Top with a light sprinkling of chopped onion and optional sour cream or crema garnish.

(Note: These are great served with guacamole and a simple mixed greens and tomato salad tossed with House Vinaigrette.)

Pooti, I've got a question about your Breakfast on a Bun. Do you actually put all of that together and eat it like a sandwich or do you eat each half open faced?
