Party food suggestions

I'm co-hosting a baby shower soon and need ideas for attractive yummy LC finger foods. Something I could make ahead would be great.

BTW-I've been lurking on this site for a year and it's been so very helpful. I've gotten tons of advice and recipes. I'm insulin resistant --but only about 5 lbs. overweight so it's a matter of NOT becoming diabetic for me. Thanks to all who develop and share recipes here -- you're amazing!

Everyone loves these when I make them:


Tooter's Mini pecan pies

2 Tablespoons butter
1 1/4 cup of almond flour
4 oz (half of an 8 oz package) of cream cheese

Preheat oven to 325 degrees. Soften cheese and butter and blend well. Stir in flour. Chill 1 hour. Shape into twenty-four 1-inch balls. Place in ungreased small muffin tins. Press down to form crust.

Filling
1 egg
1/4 cup of Splenda
1/2 cup of Diabetisweet
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon Black Strap Molasses
Dash of salt
3/4 cup of chopped pecans

Beat egg, sweetner, butter, vanilla, Molasses and salt until smooth. Divide half the nuts among pastry cups. Add egg mixture. Top with remaining nuts.
Bake for 25 minutes or until Golden brown.

Loosen the mini pie's sides with a teaspoon, then scoop them out and set them aside to cool.

Here is another winner. One year I packaged them up in pretty containers and gave them as gifts.

Laura Dolson's Five Minute Sweet Spiced Pecans


Ingredients:

* 2 cups pecan halves
* 2 Tbsp butter
* 1/4 tsp cayenne or other hot pepper
* artificial sweetener equal to about 3 T sugar
* 4 tsp cinnamon
* 1/2 tsp salt

Preparation:
Use a large enough skillet so the pecans are in one layer. A nonstick skillet works well.

Melt the butter in the skillet and add the hot pepper. If you are using liquid artificial sweetener1, add it now.

Add pecans to skillet and cook over medium heat. Stir every 30 seconds. After 2 or 3 minutes, stir them constantly until they just begin to brown. Pecans burn quickly, so keep your eyes on them. If the butter starts smoking before this point, turn off the heat and call them done. Stir in cinnamon, salt, and powdered sweetener if you're using it. Remove from pan and place in bowl (pecans can still burn sitting in the hot pan). When they seem cool enough to taste, adjust seasonings accordingly (if you want more salt or sweetener)

. Carbohydrate Information:1/4 cup of pecans have 1 gram of effective carbohydrate2 plus 3 grams of fiber.

This is super:

Jennifer Eloff's Bacon Cheese Spread

8 oz light cream cheese, softened (250 g)
1/2 cup mayonnaise (125 mL)
11/2 cups Cheddar cheese (375 mL)
2 tbsp chopped chives, OR green onions (25 mL)
1 tsp dried parsley (5 mL)
1/4 tsp garlic powder (1 mL)
8 crisply cooked bacon slices

In food processor with sharp blade or in blender, process cream cheese and mayonnaise until smooth. In medium bowl, combine cream cheese mixture, Cheddar cheese, chives or green onions, parsley and garlic powder until well combined. Spread evenly in 9-inch (23 cm) glass pie dish.

Place bacon on bacon rack and cover with two paper towels. Microwave on high power 7 to 8 minutes. Cut into small pieces with pair of kitchen scissors. Garnish top of cheese spread with bacon pieces. Bake in 350°F (180°C) oven 15 minutes and serve with low-carb crackers.

Yield: 12 servings
1 serving 176.4 calories 7.5 g protein 15.7 g fat 1.1 g carbs

You might want to make almond thins. I know you can just buy crackers, but almond thins are SO tasty and very healthy. Last time I brought them to a party people couldn't stop eating them. One person couldn't believe I made them. The recipe is easy to find on this forum.

If you are going to serve cheese, consider cutting it up into fun little shapes. Depending on the kind of cheese, you may be able to use some simple cookie cutters. Hearts and flowers, or even just circles and squares would be cute on a plate.

Get a bag of those baby bell peppers, slice in half -length-wise like boats and stuff them with a mixture of goat cheese (or cream cheese or both)and herbs - or you could use grape tomatoes and do the same. garnish with some fresh chopped herbs.

A cold grilled veggie tray would be great (I get thsi when I go to bertuccis)- whole mushrooms, asparagus spears, eggplant and zuchinni slices etc. marinate them in olive oil and seasonings grill and refridgerate

also mini mozzarella balls marinated or fresh

skewers of mozzarella balls with ham chunks and cherry tomatoes or use any type of cheese - swiss and ham, turkey and cheddar - blt skewers etc

for spicy - jalepenos halved lengwise and seeded, stuffed with a mix of cream and cheddar cheese wrapped in bacon and baked

any kinf of skewered chicken or beef

chicken wings

mini pavlova with berries and cream
