Lemon Drop Cookies with picture
This is a modified version of a recipe I found in Cooking with Coconut Flour.
These are not the prettiest cookies, but they are good. They look like little drop biscuits. Lemon Cookies Makes: 24 4 eggs 1 cup Sugar substitute (I used 1/2 c Splenda and 1/2 c Xylitol, whatever you use, you want it to equal 1 cup of sugar) 1 1/2 teaspoons lemon extract 1/4 teaspoon salt 1/2 cup melted butter 3/4 cup coconut flour (I used Bob's Red Mill) Mix together eggs, sugar, lemon extract, salt and butter. Then add in the coconut flour and give it a good mix. Let sit for a few minutes. (Note: batter will be VERY thick, and almost dry looking). Using a spoon drop cookies onto a greased cookie sheet or cookie sheet lined with parchment. I got two cookie sheets of 12 cookies each. Bake at 375 for 15 minutes. However these cookies look before they are baked it how they will look after. They do not spread or change shape. Also I found they will get dark on the bottom, but not actually burn. When they come out of the oven they will feel a little spongy to the touch. Also, once they cool, the coconut flour taste isn't as pronounced. Not the pretties picture, but this was part of my first batch. ![]() ![]()
