I need help
Need some help. If a recipe calls for 1/4 tsp of pure stevia extract, how much is this in liquid splenda? Thanks

Here is a chart..
Cooking With Stevia and Stevia Recipes I use one drop for one teaspoon of granulated Splenda..Sometimes I add a little more.. I always taste it before I bake it. |

LOL..1 drop, I would guess and cut back on the other sweetener a bit. Sometimes I think my liquid splenda would be 1 drop equals 1/2 tsp. |

I think I need a board up side my head to understand these things sometimes. For example even though I have asked this question in the past I still am so totally unsure. The recipe calls for 1 cup granulated erythritol and all I have is powdered. How much do I add? What I read is If 1/4C granulated=1/3C powdered so how much more do I add to make a cup? 1 c granulated = 1 3/4 c powdered is this correct? Last edited by SkeeterN; 04-11-2012 at 12:03 PM.. |

I'm not Carolyn, but if 1/4 cup granulated = 1/3 cup powdered, just multiply both sides by 4, to get 1 cup granulated = 4/3 ( or 1 1/3) cups powdered.
As for the stevia, I think there was a discussion about 'what is a drop of stevia' that might help. Of course there is a lot of math involved in that discussion, too, because some people had liquid and some had powder. This stuff gives me a headache on a regular basis. |

Well I ended up using my powdered E and a Ideal white about. Batter tastes good we shall see. Thanks everyone

if 1/4 tsp stevia equaled 2 tsp of splenda then you need 2 tsp sugar equivalent for liquid. This varies from brand to brand. you would have to read the label on your liquid splenda bottle. mine is 3 drops = 2 tsp. they are all different some are stronger, others weaker

Well I got it a little too sweet. My fault because I have such issues with ratios and math. The recipe I got the caramel didn't set up very thick, but tastes great. Used Jacksmixedtape red velvet cake recipe and it started to burn on the bottom way sooner than the 40 minutes the recipe called for. I set the timer for 30 minutes and it was starting to burn at 25 minutes. DH liked it though. Texture is a bit different than regular cake more dense.
