I am blown away with how moist this is. My husband said he expected it to be dry and this is far from dry and he said he loves it.

Esther - I don't how I missed this when you posted it, but you're cakes look wonderful, too!

I have made the original chocolate mayo cake with vital wheat gluten before but I like your changes.

My daughter called me last week to see if I had a recipe for a chocolate cake. She has a friend who has gestational diabetes and wanted to surprise her with a birthday cake she could eat. I remembered this recipe. We made it this afternoon...OMG! Not only is it delicious but it makes a beautiful cake. We put most of the batter in a tube pan and then made half a dozen cupcakes. Thank you so much for the recipe...it is a keeper!
