Tuna Rice Casserole
One more miracle rice recipe. I wanted to make something with tuna that would be enough for at least 4 lunches. I looked on Linda Sue's website and was inspired by her Tuna Rice Casserole to evolve it into this. It's excellent and I will make it often.
Tuna Rice Casserole 2 8-oz. bags miracle rice 2 6-oz. cans tuna, drained 1 tablespoon butter 2 large stalks celery, sliced 1 jalapeno, minced 6 or 7 mushrooms, sliced ¼ cup onions, diced 1 cup cheddar cheese, shredded ¼ cup heavy cream ¼ cup mayonnaise ½ teaspoon onion powder 1 teaspoon salt ¾ teaspoon pepper Rinse miracle rice and let it drain. Sauté celery, jalapeno, mushrooms, and onions in butter until tender. Set aside. In a medium bowl, mix the cheese and cream. Microwave 1 minute to melt the cheese. Stir until well blended and creamy, then whisk in the mayonnaise. Add onion powder, salt and pepper. Add the celery mixture into the cheese mixture. Add rice and tuna and mix well. Place in an 8 x 8 baking dish and bake uncovered at 350 until hot and bubbly. Makes 4 generous servings. |

Miracle Rice
I bought a case of it so I'm a happy camper.
The Farm Mkt. next to us is carrying it now. Made some beef stew and threw 2 bags in it. Was really nice. Made it in the crockpot. Never want to be without it. |

Rice/burger/garlic/onions/eggplant, tomatoes
Kinda sounds Italian, but I didn't want that taste. Wanted something
that tasted like what my mother called "Spanish Rice".... It wasn't Spanish at all, but a very American dish. She could throw it together quickly and it was always a tasty, filling meal. Hamburger Rice 2 tbs. good olive oil 2 lbs. good ground beef 1 large onion, large chop 4 cloves garlic, minced 3 large garden tomatoes, peeled and chopped or (1 can tomatoes) 1 medium eggplant, peeled and chopped (I don't like the seeds) 1 small can good tomato sauce Salt & Pepper to taste 2 bags of Miracle Rice, rinsed well and final rinse of lemon juice Garnish: Shredded Mozzarella cheese for the top DH used Cholula hot sauce. OPTIONAL Crumble and brown the ground beef in one tbs. of olive oil Add the garlic and cook just until the blood leaves the meat. Add the tomatoes, sauce and eggplant, salt and pepper to taste and let it simmer for about 15 minutes. Add the rice, stir and cook open cover. While this is simmering. Add 1 tbs. olive oil to another skillet and cook the onions, just until clear so they still have a little crunch. When done, throw them in the skillet and cook a couple more minutes. Place into bowls and put the cheese on the table. When you add it to the bowl, stir and it quickly melts. Enjoy

Wow! I made the recipe in the post above, and it was GREAT. I am a Miracle Rice convert!
I didn't think it was terrible when I opened the package, either. But I grew up on the ocean, going to fish markets and stuff. I didn't think it was anything worse than your average fish market. LOL |

I have never smelled anything "fishy" when I opened any of the different Shirataki noodles (or rice)! I do still rinse them very well to get all the preservatives off.
Course it seems my olfactory glands (my "smeller", as I usually say) aren't working all that well the last year or so. Not the only thing I can't smell, or smell well. I just have never smelled anything when I opened any of the Shirataki noodles tho. I had been using another brand that I found at a local International foods store for several years. |

I used to love sushi and it’s one of the few carby foods that I still crave. I’ve finally perfected my miracle rice sushi and the flavor is very close to the real thing. I figured I would share for any other sushi lovers out there.
Miracle Rice Sushi 2 bags of Miracle Rice 3 Tablespoons Rice Vinegar 1 Tablespoon Soy Sauce or 1/4 teaspoon salt 1/4 teaspoon Stevia 4 Tablespoons Water 1/2 teaspoon Glucomannan Powder 4 Sheets of Seaweed/Nori Sushi fillings – I used shrimp and avocado but you can use whatever you like Bamboo mat Rinse rice well and place in a non-stick skillet on medium heat to dry out. While the rice is drying, in a large bowl mix vinegar, soy sauce, water and stevia, stir the mixture with one hand while you slowly add the glucomannan powder (I used a seasoning shaker). If you get a few little clumps it’s not a big deal because you won’t notice them. Let the mixture set and thicken while the rice finishes drying out, it should be the consistency of honey. When the rice is done drying dump the pan into the bowl with the vinegar mixture and stir it up quickly. Place your seaweed on the bamboo mat with the rough side facing you and put one quarter of the rice mix on the seaweed. I don’t usually use the whole sheet to make my roles so you can cut off part before or after you make the roll. Spread the rice out in a thin even layer. It's sticky so be carefull while you spread it around, you may want to grease your fingers or the back of a spoon just a little. Place your sushi fillings in a row on the rice and carefully roll up your sushi. There are tutorials online if you google ‘how to make sushi’ and the basic process is the same. It gets easier with practice. If you have the time to let your rolls sit before you cut them it will be much easier to keep them whole. I made four rolls using this recipe and I found two of them to be a very filling dinner. They keep for a day or two in the fridge if you keep them uncut and wrapped tightly in plastic wrap.

OMG Jess, I think I love you. I don't like sushi but I could live on sticky rice and sweet & sour sauce. I've missed it so very much. Just roll it up and dip. Mmmm. I'm going to try this this weekend.
I wish I had a sweet & sour sauce recipe, though. |

You should be able to recreate sweet and sour sauce as it is pretty easy to make non low carb....
1/3 cup white or rice vinegar (Note: rice vinegar gives better results) 4 tablespoons brown sugar 1 tablespoon ketchup 1 teaspoon soy sauce 2 teaspoons cornstarch mixed with 4 teaspoons water I'm thinking just replace the brown sugar with a.s. and use l/c ketchup and of course, glucomannan powder in place of the cornstarch. In fact, if you added red chili pepper flakes, it becomes thai red chili sauce!! I am all over the sushi recipe. Thank you for sharing!!!

Thanks Clackley. I'm about to go grocery shopping so I'm trying to put some things together. I'm all out of ketchup but I'll grab some. I have Diabetisweet brown sugar sub (I stocked up when they stopped making it), but I think I rather use splenda because I count SA's as carbs.

I hope everyone likes the sushi if you give it a go. I know making sushi can be a bit time consuming and difficult if you're not used to making it but the sticky rice has a good flavor on it's own that I think would work well in Asian dishes other then the sushi but I haven't tried it out yet. I'm thinking of trying it stir fry style this weekend with some shrimp and veggies. I'll let you know how it turns out.

I made the pork fried rice recipe from the beginning of this thread, and it was sooooo good! I ate the whole pan, I'm ashamed to say, and paid for it dearly. Gastro trouble and super thirsty from all the sodium in the ham. Next time I will only use half the ham, or chicken.
But dang, it was GOOD. |

Easy Mac and Cheese
I pan dried 1 pkg of rice added a couple of tablespoons of sour cream. add a couple of tablespoons of shredded cheddar. spread in small baking dish and top with additional shredded cheese. Bake at 350 til bubbly then broil to brown the top. So easy and good! |
