Quick Chocolate Skillet Cookies
I love these quick and easy to make Chocolate Pancake Type Cookies.
They are good warm, right out of the pan, and also good stored in a ziplock bag in the fridge for the next several days. The way I make them doesn't really involve a lot of measuring, I just go by what looks about right to me, but I don't think that you can really mess these up. I will give apx. measurements based on my best guestimates: 4 Eggs beaten 1.5 tsp Vanilla Extract (my fav is Costco's Kirkland Brand - great price) Liquid Splenda to taste (a squeeze or 2) 1/4 to 1/2 cup Heavy Whipping Cream (my fav is Trader Joes) 1/4 cup (more or less) Hershey's Cocoa Powder 1/4 to 1/2 cup Ground Flax Meal 1/2 cup (more or less) Chopped Nuts (I like Pecans or Almonds) Coconut Oil Mix first 6 ingredients together Stir in nuts Heat coconut oil in large skillet Drop spoonfuls into hot oil about the size of silver dollar pancakes. Allow to cook several minutes then flip over to complete cooking them, just like little pancakes, but with a taste more like a chocolate brownie. I have to admit that I have not gone through all of the recipes already listed here, so if this is similiar to another recipe, please forgive me. All I know is that if I have a sweet tooth and a hankering for something chocolate, that this is one of the fastest and best quick fixes that I have found. Enjoy. ![]() |
