Blueberry Pancakes
Christmas morning breakfast at my house today
![]() ![]() INGREDIENTS: 3 eggs, beaten ¼ c. heavy cream ¼ c. water ¼ tsp. vanilla extract 6 drops liquid sweetener (I use EZSweets ½ c. Carbquick bake mix ½ c. Jennifer Eloff’s Splendid Gluten-Free bake mix: (See below) 2 tsp. baking powder 2 tsp. oat fiber (not oat bran or oat flour!) 1 T. flax meal (I use the golden flax for this) 3/4 c. small, wild frozen blueberries (I use Wyman’s) DIRECTIONS: Beat eggs in a medium mixing bowl. Add cream, water, sweetener and vanilla. Stir well. Add all dry ingredients. Gently fold in berries and let batter thicken a bit while griddle is heating on medium-high heat. Oil griddle with your preferred oil. Using a ¼ c. measuring cup, dip batter onto greased griddle. When 1st side is brown, flip over and brown 2nd side. This batter will make eight 4-4½” pancakes. Top with sugar-free blueberry syrup. NUTRITIONAL INFO: Makes 8 pancakes, each contains: 92.63 calories 6.94 g fat 8.83 g carbs, 5.09 g fiber, 3.74 NET CARBS 7.38 g protein 51 mg potassium 202 mg sodium 11% RDA Vitamin B12, 9% calcium, 9% iron, 10% phosphorous, 11% selenium Jen's GF Bake Mix: 1 2/3 c. almond flour, (400 mL) 3/4 cup certified gluten-free oat flour (175 ml) 2 tbsp coconut flour, (30 mL) 3/4 tsp xanthan gum (3 mL)

Peggy I made these pancakes yesterday and they were wonderful. I only had large blueberries , I hope to get the small ones at Costco later today. I used Physillium husks like Quiznoid suggested in place of the oat fiber and it worked. My DH was very impressed. It was great having pancakes again!! Thanks for another great recipe.

Oh my--what a wonderful recipe--I have lots of frozen blueberries in my freezer just calling me to make pancakes--I may try these in the waffle iron--thanks for the great recipe and Happy Birthday!!!

Thank you, Jeanne. Hope you like them as much as we did. And Brenda, glad you guys liked them. I really do like a bit of oat fiber in my baked goods. Love the flour flavor and texture improvement it provides. Too much in a recipe is a disaster, but just a small amount does wonders.

I've not used any Glucomannon yet, so I don't know. I would think any flour sub like more almond flour, coconut flour or oat flour would do.

Man, I always have leftover pancakes, Jen. If hubby didn't like them so much, I'd probably never make them. I find them too heavy for breakfast. But then I'm not much of a sweets eater. I only bake them to experiment, as a challenge, for the one taste or two, and to keep him happy. Gotta keep your man happy, right? LOL

They WERE good leftover. I had a couple leftover, too, Brenda. I think most pancakes warm up OK the next day. Won't reheat waffles and such, but pancakes do fine as a rule.

Peggy I have a question. May I take out the flax and carbquick in this recipe? or add protein powder?

I think maybe yes, Esther. I'd sub in 1 T. chia gel for the flaxmeal and just use all Jen's bake mix. Mind you the texture will be slightly different, but I think they'll cook OK and taste OK making the changes.
