OMG very yummy!
I didn't know where this post should go, butanyways I found a great recipe for Kofta (sp?), a Lebanese mince dish that is brilliant, cheap, quick and very low carb:
Ingredients: 500gms lamb mince 1 grated onion a large handful or two of chopped parsley 1 tbsp salt 1 tbsp white (or black if you prefer) pepper a squeeze of lemon juice oil for frying Mix all ingredients together - I dont measure, but when you've got the right mix it smells really fresh from the lemon and parsley so you know you've got a good mix. Leave overnight (only if you have the time/inclination, it makes a bit of difference,but not alot). Using the mixture, make small balls about the size of a golf ball. Fry until nicely browned. Serve with a squeeze of lemon juice. A great way to have these is with mayonaise mixed with raw, grated garlic and a salad of tomatoes, parsely, onion, lemon and olive oil. When I get around to getting some low carb tortillas, I will smear the mince mixture over a tortilla, grill until cooked and serve that with cucumber and garlic mayo. Yum yum. Enjoy!

Is mince just ground meat? If not, could it be made with the chopping blades of a food processor?

Yep, mince is just minced meat. I think you need a proper mincing blade if you were to use your blender or it could burn your motor out.

My dad used to make this then mix with mayo. He'd put in on bread and top with another slice. We call them grandpa burgers in memory of him. I haven't had one in a long time. I think i'm gonna make some soon. Thanks for bringing up a great memory!!!!

I make Kofta quite often, I love Indian and Middle Eastern flavors. My recipe is similar though I add a few other spices:
1 lb. ground beef or lamb 1/2 cup chopped flat leaf parsley 1/2 cup chopped cilantro 1 medium onion grated (it's the juice that makes this dish) 1/2 to 1 TBS Garam Masala (essential) 1 to 1 1/2 tsp of cumin 2 cloves fresh garlic, chopped fine 1/2 TBS black pepper 1/2 TBS salt Lemon or lime wedges for garnish Homemade Taziki (sp?) for dipping I think it helps to let the mixture marinate at least 2 hours, let the meat come up to room temp before cooking. Helps keep it very moist and tender. I like the flavor best when these are grilled, but pan frying or even baking works. I shape good sized balls then squish them over pre-soaked wooden skewers, and grill over a medium hot coals, until nice and browned. Anyway you shape them and cook them works great, these are so delicious and a great, unique way to use ground beef. |
