Review of Jennifer Eloff's Frosted Pumpkin Cookies

Hey everyone, just a heads up. I made Jen's Frosted Pumpkin Cookies (which are also gluten free) last night and they are really yummy!! Haven't had this good of a low-carb bakery item since I started low-carb. I do not think anyone could tell these were low-carb cookies. And especially eating them after they have been refrigerated for a while. They are even better. They are a little fragile right out of the oven but firm up well. By the time they cooled I was able to ice them without them breaking up if I did it carefully. Once you refrigerate them though they are no longer fragile. And, if you make them, be sure to put the walnut pieces on top of them. Yum! I am a real believer in her GF bake mix now. It makes wonderful products with no funky aftertaste. You can find the recipe on her blog or she may post it here when she reads this since I am not allowed to post the link here.

Thanks Linda for your report on Pumpkin Cookies

I went ahead and made the bake mix and the cookies, which
are cool and so delicious. No after taste, just as my DH said,
"so good they are a red light food"...I flash froze the batch and
now will frost them and put them in our special cookie tin in
the freezer. Hopefully there will still be some later in the month.
Having said that, if you make Jen's bake mix recipe, be sure
to double it. This is the best cookie yet. Even better than the
peanut butter cookie. I think that this cookie dough can provide
a base for lots of tweaks.

I polished off a batch last week, complete with frosting. Oh my gosh, so good!

I just made her pumpkin muffins with her gluten free bake mix, and again, oh my gosh, these are the first that I can truely say taste like muffins. I had to stop myself from eating too many this evening. Again, complete with the cream cheese topping. Thanks, Jennifer!!!!!

So glad you liked them. But don't expect to have any left in a month. I can't keep my hands off them. But at least you know you're eating something that is actually good for you. Hard to believe, hun? And, yes, to doubling Jen's GF bake mix or even tripling it. It goes fast. My first batch I doubled is already gone just on the sandwich bread and the cookies.

Jennifer gave me permission to post the Frosted Pumpkin Cookies here so here ya go. The picture did not come out for some reason. The recipe is in her new cookbook called Low-Carbing Among Friends. The bake mix is her new GF bake mix.


FROSTED PUMPKIN COOKIES

Spiced cookies with a sweet frosting. They are nice on their own too without frosting, but I think the cookie batter tastes the best of all! My bad! These are soft cookies due to the moisture from the pumpkin and they firm up in the refrigerator - either way they are nice, but I think I like them cold more. Yummy, I had one with a cup of tea this morning. I am jumping out of my skin with excitement over this new book which is going to the printers shortly! However, it's tough to stay out of the kitchen, so I took time off one afternoon and made these for myself and hubby, a friend and for you my blog friends. Thanksgiving is coming up. I will give you some more ideas when I get some time. Tough to keep up my blog this month. I'm very busy.

2 eggs
1 cup butter, softened (250 mL)
Liquid sucralose to equal 1 cup (250 mL) SPLENDA® Granular
1/3 cup erythritol (75 mL)
1 cup canned pumpkin (250 mL)
1 tsp vanilla extract (5 mL)
2-1/4 cups Gluten-Free Bake Mix, (300 mL) page___
2-1/2 tsp baking powder (12 mL)
2 tsp cinnamon (10 mL)
1/2 tsp baking soda (2 mL)
1/4 tsp salt (1 mL)
Betty Crocker Frosting, page___:

Preheat oven to 350°F (180°C). In food processor, process eggs, butter, liquid sucralose, OR SPLENDA® Granular, erythritol, pumpkin and vanilla extract. In large bowl, combine Gluten-Free Bake Mix, page___, baking powder, cinnamon, baking soda and salt. Add dry ingredients to egg mixture and process.On ungreased cookie sheet, drop batter by big, heaping tablespoonfuls (22 mL). With spoon spread into a circular shape. Bake 10 to 12 minutes. Cool half an hour and then frost


Yield: 30 cookies
1 cookie115.3 calories
2.1 g protein
10.5 g fat
2.8 g carbs



BETTY CROCKER®-LIKE FROSTING Very similar. The low-carb pancake syrup has thickeners in it and makes this frosting a thicker mixture. You may also use my condensed milk (either of them but add 0.5 oz melted cocoa butter) as a frosting, just reduce the liquid requirements and if your whey protein powder is on the salty-tasting side, then use unsalted butter and add a bit of salt to taste.

1/2 cup SPLENDA® Granular (125 mL)
4 tbsp powdered erythritol (50 mL)
4 tbsp whole milk powder (50 mL)
1 tsp cornstarch (5 mL)
2 tbsp low-carb syrup (such as Estee® Maple Flavored Pancake Syrup)
3 tbsp butter, melted (45 mL)

In blender, combine SPLENDA® Granular, powdered erythritol, whole milk powder and cornstarch. Add sugar free syrup and butter; blend until well combined.The dry mixture up to cornstarch in the listing above can be stored in the refrigerator until required (double or triple the dry ingredients, if desired – use 3/4 cup (175 mL) dry mixture per recipe). It will rival the real thing any day!


No one will ever really guess that it is not actually the real thing and that's the best part.

Yield: Double the recipe for 11/2 cups (375 mL) frosting to frost an entire cake.

have a raft of cake, cookies or pie, all kinds of fruit, none
of which I can have. So I took the two biggest ones.
Three people wanted a taste. Well I gave them each ia teeny
piece of the corner and all raved. With the exception of one
who said "well they ARE good BUT I can taste a little sugar
sub. I said GIVE ME BACK MY COOKIE

Did you say you made bread with the bake mix?
My gosh is that recipe somewhere?

* We knit layettes for the babies at the Marine Base, Camp
Pendleton, also caps for the guys to go underneath their
helmets and other things.

Funny someone said they tasted sugar. Well they are nice a sweet, which I like but I don't like to share, ha! Yes, I find a good tasting recipe and I get a bit selfish. Wow and how nice of you to do something so good for our soldiers, Barbo.

I made these today . Scrumpdelicious. Wow they are so good and the gluten-free bake mix is the best. My Dh thinks they are very good.

Aren't they, though? And they make enough to last awhile. I could do without the frosting but I did not, yum!!!!!

Elle, yes, you can use the Splendid Low-Carb Bake Mix - use about 1/4 cup less bake mix than the recipe calls for. I also like these cookies. I'm not the best cookie baker in the world, but I've been getting better at it and these are great!

I also made some wonderful chocolate chip cookies the other day - nice and low in carbs - chunky, big cookies. Yum! Will post them on my blog and here soon.

Rose, I'm happy your hubby likes them. Barbo says she has to keep them coming and have them in the freezer for her hubby, Jay. Makes me happy-happy to hear things like that!

I try with the portion control (don't always get it right - mostly don't). I'm very human (with a hypothyroid condition and perimenopausal) and just constantly have to stay on top of my weight by weighing regularly. I'm very rarely happy with my scale weight. Truth is I could afford to weigh quite a bit less but I find it extremely hard to lose weight and that's why I need to stay on top of things. I have "bad" days (eat way too much of what I make) and try to balance those with "good" days where I eat much, much less. I am also low-carbing anywhere from 30 grams to 100 grams a day. I can gain 5 lbs in 2 weeks on regular high carb/sugar-filled eating. Low-carbing is the only way I can hope to maintain a half decent weight.

Yes, do try them, but as Jennifer says, portion control. These are wonderful especially with the frosting. I never think to frost cookies but well worth it!

I've seen the picture of you on your blog from October and you look absolutely fabulous, Jennifer! I'd say you are sure doing an excellent job with blancing your good days and your bad days. You are quite an inspiration!!!

Aaw, you are so kind. You made me feel great.

I remember you because of your doggie. I could really relate because of Happy, our beloved dog who passed away at the age of 14 years and 2 months. I still cry over Happy sometimes when I think about him too much. I love little Smiley to bits - our adopted doggie - but I miss Happy sometimes. He was such a precious part of our lives when the boys were growing up and the memories ... oh the memories are so wonderful! I think dogs are like little angels. They have a special purpose, I think - different from ours.

I totally agree, Jennifer. I had 2 dogs (different times) and I still miss them. I will have to get another one someday soon.
