Chayote Squash

Just wanted to say that after hearing about it for 9 months I was finally able to find some. (moved from rural Ohio to just outside Raleigh, NC)

So far I made chayote cut up like apples, microwaved with butter, cinnamon and pecans. Delicious!

And then I just had some with butter, cheddar cheese, heavy cream and sour cream. Really good too!

If you can find these and haven't tried it yet... just do it!

The Mexican market here has them for .68 this week. And I've NEVER seen them over a buck there!

I added them, peeled and chunked, to a pot roast last week, and also to my corned beef this week. They're a great potato substitute - not as much "bite" as a turnip, not as starchy as a potato - they're just GOOD!

I totally missed this post last year, but I've made your recipe from Jenn's book. I really liked it.
I'm at my sister's, and we found Chayote today at a Mexican store here. The very cheapest I've ever found them at home was 88¢ a pound (ONCE). These were 50¢ a pound today!! I bought 2 medium ones, and they were 60¢ total!! We are planning on making this (probably tomorrow). Glad I found this here tonight, as I don't have my cookbook with me! I would never have remembered the recipe.

I'm also looking for the Chayote, bacon, & onion recipe. Is is here somewhere too? (Might manage to get back over to the store for more later this week, or sometime soon.)

Billie Chayote at .99 Cent Store 3 for a buck

You might like my Cream of Chayote Soup.

Barbo's Cream of Chayote Soup
(Mirliton)
*6 medium chayotes peeled and cubed
6 slices bacon
1 large onion, chopped
3 cloves garlic, chopped
4 green onions, chopped
2 tablespoons parsley
5 cups chicken stock
1 cup cream
Chili Verde to taste
Salt and pepper to taste
Thickener of choice

In a large pot put the 5 cups of chicken stock and the cubed chayotes. Bring to a boil. turn down the heat and cook until tender.

In a skillet fry the bacon until golden brown. Remove and crumble. Add onions and garlic to some of the bacon grease and sauté until tender. Add all the skillet ingredients and the bacon to the pot with the chayotes. Cook for 30-40 minutes. Remove from heat for 5 minutes, then slowly stir in the cream and simmer 5 minutes longer. Blend all but about 2 c.of chunks. Use a stick blender in the soup pot. Add back in the unblended portion. Thicken to taste You can blend it all if you want a totally smooth soup. Either way it's delicious. We much prefer it chunky.

Topping Variations:
Cilantro, we served it with sour cream, or additional green onions.
More chili verde. Delicous soup and very versatile.

CHAYOTE POTATO PANCAKES

Barbo’s Low Carb “Potato” Latkes (Pancakes)
2 chayote squash peeled, seeded and quartered
3- oz. of red or white onion, sliced
2 eggs
1/3 c. CarbQuick
Pinch of onion powder
Pinch of garlic powder
Seasoning like Paula Deen’s House Blend

Get the Cuisinart out with the shredding blade, or by hand.
Place the squash in and shred. Dump into a mixing bowl
Now place the onion in and shred. Dump into another small bowl.
Squeeze the shredded squash very tightly because like potatoes these have loads of juice, then after you think you’ve got it all out put it in a colander and press out the rest. Now add the onion, two
Eggs, some seasoning and lastly the CarbQuick. Mix well.

Using an ice cream scoop lay the mix into the hot oil (of your choice) and spread with spatula, keep going until you have filled the pan but the latkes should NOT touch. Fry until nice and brown flip over and do the other side. Serve hot with sour cream. Brisket of beef or just eat them. My neighbor thought they were the real thing. This made six really nice size pancakes. We wanted to have what was left from the tasting and had them along side some pork and kraut. I put them into the toaster oven and they crisped up for me. Yay!

Tho I have a Dollar Tree (NO produce there tho), I don't have a 99¢ store. Also there are none nearby here at my sisters. I WISH we both had one!! These I found here (and that is quite a ways from my sister) were the cheapest I've EVER seen them myself by far!!!!

To try cooking with them is strange at first.
Now I can't say enough about their versatility.

I've made scalloped potatoes with cheese,
Potato pancakes
Apples with cinnamon
Soups, chowders
Mashed
Made a recipe using them mashed instead of applesauce.
I think it was one of our cake recipes. Spices and
cream cheese frosting and it was a hit.

I love Grand Asia Market in Carey! Chayotes are .99 a pound, or about 2 for a dollar. wish I lived closer. (I'm about an hour away) That is the place that has inspired me to try many many new veggies.

Pittsburgh area(PA) has a new store (Bottom dollar Foods) they carry for 99cents each. I just sliced and marinated in italian dressing-really good with alot of crunch. I'll have to try sweet and baked.
