Craving top ramen!
Has anyone come up with a good substitute? I'm thinking good chicken broth, maybe an egg dropped in, maybe some shiratake noodles?
Let me know if you know of a fabulous asian soup recipe. |

Ugh, I loved the Oriental flavor top Ramen. I tried to make some with shiritake but I can't get the seasoning right. I've searched a few sites but they are all different. I've also tried to find out how many carbs were in the flavor packets of Ramen with no success.
I do know I got some powdered chicken bullion and it must be based with that because it's the most familiar flavor I could find, along with onion and garlic powder, ginger and black pepper. Last edited by MsWoods; 10-10-2011 at 09:43 AM.. |

Ramen Powder
MsWoods,
I really don't think that the carbs are in the dry powder. It's all about the noodles. If you like the shirataki noodle, just be certain to rinse rinse and more rinse and then go ahead with the ramen powder. See if you can get close to the flavor you desire. If I can find the carb count on the oriental flavor I'll post it. |

I use my strip peeler and make long spaghetti type noodles with zucchini heat for a few minutes in broth Yum! Egg drop soup is filling and delicious too.

I like using the "roast beef" flavor packet in my crockpot roast or sprinkled or beef strips. My little girl eats the noodles, but not a lot, just sometimes when I make stir-fry she'll get noodles in hers, so they don't go to waste. I swear she could eat a full package (they claim its 2.5 servings!) if I let her, and beg for more when she licked the bowl clean.

Your not the only one I crave top ramen to, Which I find funny because if I was not low carbing I doubt I would ever crave them.

I used to go off plan and eat top ramen three times a day.
I get concerned about foods like that, foods that I want to consume to the exclusion of absolutely everything else. Diet Coke was like that for me. I think its the msg. I'd rather come up with a natural substitute; maybe some good bone broth with ginger, pepper, onion, garlic... and get used to that because I can get a little weird around chemicals. |

I just looked at a package of Maruchan ramen and the second ingredient is MSG. Third is sugar so there are some carbs. I'd count one or two carbs per packet.
I was shocked to see that one package of ramen has 52 carbs! A serving size is half the package and that has 26 carbs. |

I am pretty sure the seasoning packets are close to zero--all the different calorie sites say that--not natural, full of yucky stuff, but if you really want it, I say go for it. I'd pan fry some shiritaki noodles til nice and dry and then put in some soup with a packet. Then drink a ton of water to flush out all that sodium!!!!!!

Put shiritake noodles in the bottom of a bowl, put beef on top, and ladle the clear broth over top. It will cook the beef in the bowl. If you want the beef well done, put it in the broth for a few minutes before adding to the soup. Garnish on top with bean sprouts, radish, scallion, diced jalapeno, sliced bell pepper, peanuts, and hoisin (hoisin is fairly high carb though). The carbs are very minimal since it's just broth and shiritake, depending on what garnishes you use. |

That sounds like a gorgeous soup, ms woods.
I love making my own chicken broth from roasting chickens. I buy two chickens from costco, roast them in olive oil, tons of butter and lots of seasonings. Then we eat the meat either by itself dipped in drippings, or in recipes. Then I dump the entire roasting pan; gizzards, bones, skin and drippings into the crockpot and fill with water and a bit of ACV. 24 hours later its an amazing broth. Buttery, rich and brown. |

I make a fake top ramen using shirataki noodles, a cube of Knorr vegetarian bouillon (about 1 carb), and once it is made, I love to add a tablespoon or so of sour cream .. it tastes much like the ramen I used to eat, lol!
I think any bouillon cube with all those awful ingredients .. lots of salt and some msg .. will give that flavor we love, lol!!!! ![]() Pauline |

I bet the seasoning has msg and that's a no-no for me. I miss Ramen noodles too, though. I always liked cooking the noodles and just adding some butter. YUM! I miss cereal too

Ramen
Honestly when I was not LC I craved the stuff and one package
went right down and I wanted more. I too wonder if the MSG makes one crave for more? I think I'll try the ramen packet suggestion with the shiratake noodles and some thinly sliced green onions. Even a scrambled egg in the soup sounds good. |
