coconut bread is a good sub for cornbread
That is what my southern hubby declared when I gave him some coconut bread I made!
3/4 cup coconut flour 1 tsp baking powder 1/2 c butter 6 eggs beaten to frothy 2 tbs honey or agave syrup or 2 tbsp water & 2 packets truvia 1/2 tsp kosher salt Mix together, put in parchment lined loaf pan and bake 350 for 25-30 minutes. It is very much like a biscuit (texture wise) and tastes vaguely like cormbread. Total carb count varies if you use the honey but is around 2.5 carbs per slice (recipe makes ten) if memory serves. Made with agave syrup it has abount 5 in each serving.
