Grilled Cheese Sandwich

Someone mentioned they wanted a good toasting bread for a grilled cheese (and tomato) sandwich on another thread and I thought I'd post this recent recipe for them. It toasts nicer than any LC bread I've toasted to date. I'll tell you up front, it will not toast any better than other LC breads if you don't put the oat fiber in it:

I just checked out the recipe,( love your site). But is that really a 613 calorie sandwich? Seems high. I have to keep my calories under 1500 these days.

You're welcome, Truffles. Yes, now I remember it was you who mentioned it.

Brenda, yes, this sandwich is high in calories. 5T. flax meal alone has 190, the butter another 200, 62 on sour cream, 71 on an egg and 86 on the cheese. I remember being surprised as well by that when I created this recipe. I could only afford to eat one of these when I had a lot of "room to spare" in my day's menu. So the lion's share of the nutritional stats for this are in the bread itself. But a plain MIM has 265 calories, so those who use that for their main bread, by the time you add in cheese to that, you're still looking at nearly 400 calories there.

So what you noticed is precisely why I rarely eat sandwiches (only ate this one the one time), or muffins, or toast, or baked goods. I'm following the much stricter Atkins '72. Baked goods don't cause me cravings, but I find they just push the ****** log numbers way too high to stay within '72 guidelines of 20 TOTAL carbs. But I do a lot of kitchen testing to find better things to offer my husband to try to get him closer to a pure low-carb WOE. And I put the better results out there on my website for those that do "imbibe" in these food "luxuries", as I call them.

Too high in Calories for me too but would work like a champ when I'm needing some comfort food badly and would keep me from cheating.

Buttoni, your picture makes me drool! I make bread for grilled cheese by mixing 2 Tbs oat fiber, 2 Tbs carbquick (if you can do it), 2 Tbs golden flaxmeal, eggwhites and a little baking powder. micro. makes a much lower calorie "bread"--but of course the cheese and butter for grilling push everything up again--

I'm trying to get the hang of sizing down pictures so I can post them here.

Yours recipe sounds good, too, Ouizoid.

This one's more like 60% smaller and I think that is going to do nicely. Let's see how big that appears:

YES! 60% downsize is better. Now let me go back up & delete the big one.

I'm sorry Brenda, I see I managed to not answer this question for you. Oat fiber comes from the outer coating of oats, not wheat. But oats are indeed a grain. According to Honeyville Grains, where I buy a very large bag of this, it is 94% fiber and therefore a more concentrated form of fiber than oat bran. Another reader on my blog asked if it was gluten free and I Googled to try to learn the answer to that. I discovered that on at least one celiac site oat fiber was on their list of foods to be avoided. So that remaining 6% must contain some gluten. But not being gluten-intolerant myself, I haven't pursued that topic much. So far, oat fiber has presented no gaining issues or carb cravings for me personally.

How many eggwhites (or how much liquid eggwhites), how much baking powder, and how long did you microwave it? Thanks.

I would like to try both recipes. I had lunch yesterday with some friends at the Cheesecake Factory. One of the girls had a BLT and the bread looked just like what Buttoni's looks like above, oh my gosh I was ready to steal it right off her plate!!!!!

I think I've asked about oat fiber and flour and gluten before and, if I recall, the answer was that the product itself is gluten free but it's usually made on the same machines as wheat fiber/flour so there can be gluten in the final product because of that.

I tried this today and it was VERY good! I undercooked it the first time, different microwaves.
Question- I did not get as many carbs as you did for my count. Buttoni- could you break down the ingredients with the carbs in it for me to see where I am counting wrong??

Actually, reloading all ingredients again to ******.com, I'm getting a slightly HIGHER number. I might have loaded one ingredient incorrectly the first time Not sure, so I need to go adjust the recipe on the website to reflect the stats below: (******.com is what this is taken from and fiber is shown down by the pie chart) Hope this is big enough to read.

OK, I've corrected the nutritional info on the website and anyone who printed this out will need to make those changes on their hard copy. Thanks for questioning this one, Tilly, though I'm sorry my findings still do not pull the count lower, but instead a bit higher.

Calories per sandwich = 617
56.1 g fat
17.7 g carbs
13.2 g fiber
4.5 net carbs
19 g protein

****** doesn't subtract it for you. My oat fiber is a wash, too: 3.4 carbs, 3.4 fiber, 0 net carbs.

I'm thinking the difference we're getting is from the flax meal? I use different brands and loaded my flax meal to ****** as a custom food per the nutritional info I had on my label. I rarely use Bob's Red Mill, which shows a carb wash on the N.I. chart. I use Walmart's dark flax meal and Flax USA's golden flax, and those don't show a wash, as I recall. I have 2T. loaded in as 5.4 carbs, 5.1 fiber, or .3 NC. So that's probably where my count is coming up a bit higher. But it's down to a question of whose flax nutritional labels to we accept as correct? Impossible for we lay people to know really. I suspect Bob's is the one guilty of rounding down, if the other brands are "owning up" to any carb count at all. Don't you?

But I don't think it's enough of a difference there to impact our decision whether to cook/eat this sandwich or not. Heck, anytime my carb count for a meal is 5-7 net carbs, I consider that a GOOD meal.

The brand they're selling at Netrition has zero net carbs. I tried looking it up on the USDA site but they don't list it. In any case, I get the same net carb count for the sandwich that Peggy got or within 1/2 net carb. She got 4.5 and I get 4 net carbs from MasterCook.

Thanks Linda. I got the Oat Fiber from Netrition. So it looks like that is zero carbs YEAH!! And yeah I usually don't count much for flax- unless I use a cup I will add 2 carbs.

I added ham to my sandwich too which raised the count for lunch yesterday! Which was delicious!

Thanks for your input, Linda. I suspect the brands showing 0 are rounding down, which is OK I guess. I don't like that rounding down myself. Glad you liked the bread recipe, Truffles. It does taste a little less "cardboard-y" than other LC breads.
