Why did I wait so long to try
the one minute muffin?? These things are AMAZING!! I added some banana extract to mine and it was soooo good! And filling! Thanks to who ever came up with this recipe!!

I guess I need to try flax again along with the OMM now that I now more about LC and flavorings. I just need some good recipes that are tried and true with simple ingredients to get me started. Do either of you mind sharing some? I am not the greatest baker so details are important

Ohhhh....I bet the pumpkin pie spice would be good! Especially if I added a sugar free cream cheese frosting for a treat!

I left out the cinnamon. Added 1 tsp pumpkin pie spice and 1 tbsp pumpkin from a can. Was very yummy. Then add cream cheese frosting. You can even stick a frozen cream cheese cloud in the middle of the batter before you cook it for a creamy center. Yuuuuummmyyyyy!

I just use the cloud recipe.
1 stick butter, 1 block cream cheese, sweeten to taste. I use stevia but whatever you like. Make sure butter and cream cheese are soft and whip. Add sweetener to taste. I usually freeze part for cream cheese clouds and save some for my muffins. You can use flavored sf syrups to add variety. Carmel. Chocolate. Raspberry. Whatever you like. Just skip the sweetener as those syrups usually have splenda. |

I had the same epiphany a week ago when I tried it for the first time. I was getting so tired of eggs for breakfast every morning and this helps me break it up by having them for breakfast 2-3 mornings per week. So far, I've tried the original recipie with butter and with cream cheese. The cream cheese made me think I was eating a whole grain bagel! Next time I think i'm going to try the garlic and herb cream cheese. I can't wait to try some of the suggested variations and coming up with a few of my own!
