Quick Induction Ice Cream..

This was on the Atkins fb page.

In a large cereal bowl, dissolve 1 scoop low-carb vanilla protein powder in 1/2 cup unsweetened soy milk. Add a cup of cracked ice and stir until the ice turns the mixture to the consistency of soft ice cream.

PS..I would use half and half or almond milk or coconut milk or LC milk instead of the soy milk.

I haven't tried this but it looks interesting and quick.

This wasn't bad..I made it with Pina Colada Jay Robb protein powder..and gosh it is easy..
Will get some fresh vanilla PP tomorrow.

this sounds so easy I will have to give it a try-I actually have some OLD ice cream flavored whey I might try to use up using almond milk too--never soy--I wish they would get over that soy thing--and realize how many people are against it! anyway--thanks for posting this!!! I will give it a whirl or stir-sometime this week I think!

So does all the ice melt into the ice cream, or are there still crunchy "ice bits" in it when you eat it?

This sounds like a good candidate for my Vitamix!

You know, Char..A Vitamix would be perfect for this. I used my Bullet and had a few
chunks of ice, but not too many..It has to look like snow (the ice).
