You could set up a stand and sell them. Or give them away. Sell them to someone who has a store or Farmer's Market booth.
I would buy them if I lived nearby. I love to eat them plain, like chips. There are cucumber soup recipes, but I've never made any. And gazpacho. You can put them on sandwiches or take two slices and put cream cheese inbetween them for appetizers/snacks. If you like Greek food, there is tzatziki and in Indian foods they make a sauce with them and yogurt--forgot the name of it, but it might be called Riata or something like that. There is a great refrigerator pickle on here that is easy and tasty and you just put the container of them in the fridge and they are ready in 2 weeks, if you have a little fridge room. If you google uses for cucumbers, you will find cucumber lemonade and cucumber cocktails (I can't imagine how they taste) and even cucumber granita...they might be worth a try. I saw fried cucumbers and cucumber salsa recipes also; even cucumber marmalade and cucumber ketchup. I can't post the link here, but it was easy to find via google. I love cumcumber and yogurt sauce for fish and eggplant.
Cumcumber is really good in stir frys. relish. |

I love to take slices of fresh cucumber and top with some taco meat and some cheese, sounds strange but tastes great.
I also slice them up in some ice water and salt and serve them for supper. |

This is one of my all time favorite salads. I think it came from an Atkins book.
Cucumber-Avocado Salad With Cumin Dressing Serves 6 1 teaspoon ground cumin 3 tablespoons fresh lemon juice 1/3 cup olive oil salt pepper 6 cups mixed salad greens 1 small avocado, peeled, pitted, and cut into 1-inch cubes 1 tomato, cored, seeded, and chopped 1 small cucumber, seeded and diced 1 tablespoons red onion, finely chopped In a small dry skillet over low heat, toast ground cumin 2 minutes or until fragrant, stirring occasionally. Add lemon juice and whisk well. Add oil in a thin, steady stream, whisking until blended. Add salt and pepper to taste. In a large salad bowl, combine greens with ¼ cup dressing; toss to coay. Place on serving plates. Mix avocado, tomato, cucumber, and onion with dressing; toss to coat. Top each portion of greens with avocado mixture. |

Here's another I just thought of.
Cucumber Mousse 1 package lime jello 3/4 cup boiling water 1 cup ricotta cheese 1 cup mayonnaise 2 Tbs. grated onion 3/4 cup grated cucumber 1/2 cup slivered almonds Dissolve jello in boiling water. Stir in ricotta cheese, mayonnaise, and onion until well blended. Fold in cucumber and almonds. Pour mixture into 1-quart mold. Refrigerate until set. |

I also make a fake tabbouleh that uses a lot of cucumbers:
Tabbouleh with Daikon or Jicama 2 cucumbers peeled, seeds scraped out and diced very small 2 small tomatoes, seeded and diced very small ¼ cup chopped green onions 1 ½ cups jicama or daikon radish, chopped very small 1 cup chopped parsley ¼ cup fresh chopped mint 1/3 cup olive oil 1/3 cup fresh lemon juice Salt and pepper Combine all the vegetables. Season with salt and pepper to taste. Mix oil and lemon juice. Toss with vegetables. Adjust seasonings. Refrigerate for at least 1 hour. |

How about a cool cucumber soup?
I love thinly sliced cucumbers and onions, marinated in vinegar, splenda, and a touch of salt. Easy & refreshing for summer! You can peel, cut into about 4" lengths, and hollow out the seed cavity, dry inside with a paper towel, then stuff with any cream-cheese based dip - crab, clam, smoked salmon, or just cream cheese and herbs, like dill - refrigerate til the cream cheese firms up, then slice into 1/2" thick slices and enjoy as an hors d'ouevres.
Believe it or not, they're also good on shish kebobs! Peel and cut into 1" chunks, thread on the skewers with your chicken or beef or whatever, and grill - they taste like squash. And my fave - slice into 1/4" rounds and top with sour cream, caviar, minced red onion and sieved eggyolk. MMMM I could eat a mountain of those. They also make really refreshing ice water - just slice up a cuke and put the slices into a pitcher, add water and ice, stir. Put a slice into each glass as you pour.

Oh... and DH introduced me to this last year - sounds disgusting, but it was really good...
Spread mayo on an LC tortilla, top with sliced cucumbers, tomato and thinly sliced onions, hit with just a sprinkle of salt. |

Hollow out like Charski suggested and fill with tuna salad, chicken salad or pimento cheese. Or just slice them and top them with these. Yum!

slice thin, s&p, fresh dill, rice wine vinegar, little veg oil, little sweetner. Vine ripe tomatoes go great in this if you can tolerate the carbs. This is really nice with a spicy Asian dish.
