Coconut flour bisciut as stuffing!
I was experimenting again
This can probably be easily doubled or more for a family size side. 2 tbsp High Fibre Coconut Flour 1 Large Egg 1 tbsp Tap Water 1/4 tsp Double Acting Baking Powder 1/4 tsp Salt 1/4 tsp Poultry Seasoning (to taste) 1/4 cup Chopped Celery 1 stalk Fresh GREEN ONIONS 1/4 cup Chicken Broth (canned) 1 tsp Butter Beat egg and and water together in a microwave safe bowl. Add coconut flour, salt and baking powder. Mix well and microwave for 1 minute 20 seconds (approximately). Remove from bowl, cut into small cubes and spread out to cool and dry out a little (overnight is best, you want it pretty dry). Saute celery and onion in butter, then add the broth and seasonings (including salt and pepper). Toss in the cubed biscuit to coat. If it seems too dry add a little more broth. Stuff under the skin of a raw chicken breast, season the chicken as usual and bake in a 350 oven for 30 minutes or until chicken is cooked through. You can cook this separately, but add additional broth before baking in a ramiken for approx 20 minutes.
