Meat Loaf (pics included)

Meat Loaf



1 1/2 pounds ground beef
1 egg whisked
2 tablespoons of dehydrated onion
1 bag pork rinds ground (I use my bullet)
2 tablespoons of "Heinz" Ketchup" recipe to follow
1/2 cup of Parmesan cheese
salt & pepper to taste
other spices you may like
"Heinz" ketchup for topping

Mix all ingredients (except for ketchup topping) together. Divide by four and make mini loaves. I use mini pie pans. Bake on 375 for 10 minutes, drain and then add ketchup topping to each loaf and bake for another 15 minutes or until done.

"HEINZ" KETCHUP (from Linda's Low Carb Menus & Recipes)
6 ounces can tomato paste
2 teaspoons granular Splenda or equivalent liquid Splenda
1/4 cup vinegar
1/4 cup plus 1/3 cup water
1 teaspoon salt
1/4 teaspoon onion powder
Dash celery salt
Combine everything in a pan over medium heat. Whisk until smooth. Bring to a boil; reduce the heat and simmer 20 minutes, stirring often. Remove from the heat and cover until cool; chill.
Makes about 12 ounces
Do not freeze

Yum! I make a LC meatloaf that I love, too. Have you ever tried reduced sugar LC Heinz Ketchup? I use it for shrimp cocktail sauce with loads of horseradish! I like to put mushrooms and diced onions in my meatloaf.

I use LindaSue's LC "heinz ketchup" There may be naturally occurring sugar but I will have to check the ingredients.
How do you make your cocktail sauce?

I made Catalina Dressing by taking the LC Ketchup and adding more Splenda, apple cider vinegar, and oil... It was amazing.

I think everything that goes into the meatloaf is minimal besides the ketchup.. But here are the nutrition counts from LindaSue's page:

Makes about 12 ounces

Per Tablespoon: 6 Calories; trace Fat; trace Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
Per 1/4 Cup: 23 Calories; trace Fat; 1g Protein; 6g Carbohydrate; 1g Dietary Fiber; 5g Net Carbs



So I put 2 T . in meatloaf so divided that by 4.. (.5 carbs per loaf) but I loved the ketchup so much I slathered it over each piece and I still have half a jar left. Pork rinds have no carbs, the egg is less then (1 carb).. eek I hope this helps I'm terrible with numbers but I know this is a very low carb recipe..

mmoris, my cocktail recipe is just 2 ingredients. I use a measured amount of LC Heinz Ketchup and add a good amount of horseradish. (I like mine hot.) Mix it all up and start dipping those shrimp!
