Breakfast for the week - pics to come!
So I read around on Linda Low Carb Menus website for a Quiche dish that I wanted to try. There are several to choose from, but I decided to put my own flavor on one: Early Rise Quiche
Here's what I used. Plus I tried to cut some carbs from her original, where I thought they could be cut. 12oz Bacon 1lb. Sausage 1/4 Cup chopped green onion 1/4 Cup chopped Jalapeno peppers 12 Eggs 1 Cup HWC 4oz fresh mushrooms Salt & Pepper to taste. 8oz shredded cheddar cheese We baked our bacon @ 425 until crisp - drain on plate with paper towels. Browned sausage in skillet, drained grease. Saute mushrooms, green onions, jalapenos in seperate skillet with 1tbs. of EVOO In large mixing bowl beat 12 eggs, add cream and continue beating, add salt and pepper and mix again. Arrange sausage in a greased 9x13 dish. Crumble bacon and arrange on top of sausage. Add mushroom, green onion, jalapeno mixture then cheese on top. Then pour beaten eggs on top of entire dish. Bake at 350 for 40-45 minutes - or until toothpick inserted comes out clean (or knife). Carb breakdown. 0 - Bacon (Label is zero) 0 - Sausage (Label is zero) 1 - 1/4 cup chopped green onion 1 - 1/4 cup chopped jalapenos 7.32 - 12 Eggs 0 - 1 cup HWC 2.5 - Fresh Mushroom - 4oz 0 - Cheese (label is zero) ---------------------------------------------- 12 Carbs for the entire dish. Note: I am no expert carb counter, so if there is carbs in some bacon, sausage and the cheese I missed, please add that to your totals.) 1/6 serving - 2 Net Carbs 1/8 serving - 1.5 Net Carbs It's in the oven now, PICS to come in a few! drool....sounds amazing!
I love quiche! It's so easy and then its ready for a great breakfast. I usually eat 1/4 of a pie at a time - just heat and eat. OMG, the jalapenos sound really yummy in it. I'm on a serious hot food kick! |

Just so you know:
1 cup of heavy cream is 6.6g carbs 8oz of shredded cheese is 4g carbs When a label says "0" per serving, unless it's purely a protein (or water), it has some part carbs per serving which add up over several servings. Running it through the calculator, your whole recipe is: 4744 cals 380.1g fat 12296mg sodium 25.86g carbs 2g fiber 154g protein |

It sounds wonderful. But your carb count is proably not good. Your labels are saying zero. They do that.
Ok I just read your post again. FYI no cheese has no carbs or sausage. |

Y'all will just have to bear with me on the carb counting. I'm really new to this and I am having to figure out that the zero carbs on labels, really aren't zero.
UPDATED MEAL FACTS 4744 cals 380.1g fat 12296mg sodium 25.86g carbs 2g fiber 154g protein 25.86 carbs -2 fiber ---------------------- 23.86 Total for entire dish 1/6 - 3.97 (4 LOL) Carbs 1/8 - 2.98 (3 LOL) Carbs Last edited by Coots; 04-10-2011 at 01:18 PM.. |

I use MyPlate - Food Diary & Food Calorie Counter | LIVESTRONG.COM to track my cals/carbs and stuff, and there's a tab where you can put in your own recipes as well. Very helpful and totally free.
When you're putting ingredients it, be sure and search for the specific brand as well as watch for the little "verified" tab out to the side to let you know it's, well, verified lol. |
