Chicken Enchiladas
1 12-oz can of chicken, drained
1/2 cup chunky salsa 1/2 c shredded cheese 8 oz cream cheese 1/3 c chopped green pepper Mix all on stove top until cream cheese has melted. Place about 1/2 cup of mixture in low carb tortilla and roll up. Place in baking dish, I use a 7" x 11". Makes about 6 or 7. Top with shredded cheese and bake at 350 until cheese is melted. Serve with sour cream, black olives, salsa, what ever you feel like. With the low carb tortillas I used, each one was about 5 carbs.

Good recipe! There is an Asian store near me that sells thinly sliced chicken breast, like cheese steak style. I'm going to make this recipe and use the chicken as the roll up part.
