Metallic taste in cupcakes?
So I used this recipe from One Bowl Vanilla Cupcakes For Two | How Sweet It Is
But I used almond flour, Splenda, one whole egg (didn't wanna waste) aand coconut oil instead of butter. I microwaved it because I thought it could be like an OMM. I nuked it for almost 2 minutes because it was really wet. When I tasted it, the cupcakes have a metallic taste to them. What could have caused it? Any suggestions? Thanks! |

May be the baking powder. Try cutting it back a little bit, or buy the aluminum-free kind if you can find it there.

Also - if you're replacing the regular flour with almond - use twice as much almond flour as the amount of regular flour called for.

Hi dollkey~ that is strange, those are common items you always use. Did you use a different utensil to mix it with?

you don't mention baking powder, did you use any? that really tastes metallic if you overdo it! it's not very good for you to use too much either. try cutting the amount you used in half and see if you get enough lift. and just because this came up the other day... you didn't use baking soda by mistake did you? I realize that's a remote thing, but it wouldn't taste good! LOL

Believe it or not it could be the egg. I have had this happen to me when I was just eating an egg by itself so that is why I'm thinking this could be your problem.

My Dh said it tasted like dirt LOL
The recipe asked for 1/4 t baking powder. beeb it COULD be the egg. I dunno... I just don't wanna waste more almonds. ![]() |

I would suspect the splenda myself. Did you use liquid or powdered? Years ago when I first started using liquid splenda I put too much in some things and there was a very distinctive unpleasant metallic taste. Those failures went straight to the garbage.
I no longer use splenda but I learned from those mistakes. |

I don't know if this will help, but on another website I read of someone's problem of always getting a metallic taste from commercial baking powders...so someone posted this recipe for a homemade baking powder. She responded with a big Thankyou, said it had been a big help (so I am thinking it works although I haven't actually tried it myself). Thought I'd post it here...just in case you might like to try it--especially if you can't find the aluminum-free baking powder where you're located.
Here is a copy&paste of their recipe...so I'm quoting here: Baking Powder Recipe (I don’t like the metallic taste that comes w/commercial baking powders). Combine: 1 tsp. baking soda 2 tsp. cream of tartar 1 tsp. cornstarch (optional) OR for a larger batch: Combine: ¼ c. cream of tartar 2 Tbsp. baking soda Store airtight-will keep abt 4 wks. If it gets clumpy during storage, you may need to sift it before using it. I usually just make the small batch and not be concerned about storage issues. My DD just complained of this problem this week - how odd is that. I made her eggs in my omelet pan just like I always do and that's exactly what she said to me "my eggs taste like metal." I don't eat eggs so I was totally baffled.
