Over-ripe Pineapple

Ok, I know pineapple is not exactly low-carb, but I have one that is a bit over ripe, so it's not good to just eat straight.
All I can find is cake and muffins(which would be tasty, but I know will make me feel awful)....does anybody else know what I could do with it.

Maybe you can freeze it? Cut into small pieces and use it sparingly in recipes?? HTH...
