Anyone use Kohlrabi?
1 cup raw (135g by weight) is just 36 cals; 8g carbs; 5g fiber and is supposed to taste like a cross between a cabbage and a turnip.
Anyone have any interesting recipes? |

No, but I'm willing to try..This looks very good:
Roasted Kohlrabi Ingredients 4 kohlrabi bulbs, peeled 1 tablespoon olive oil 1 clove garlic, minced salt and pepper to taste 1/3 cup grated Parmesan cheese Directions Preheat an oven to 450 degrees F (230 degrees C). Cut the kohlrabi into 1/4 inch thick slices, then cut each of the slices in half. Combine olive oil, garlic, salt and pepper in a large bowl. Toss kohlrabi slices in the olive oil mixture to coat. Spread kohlrabi in a single layer on a baking sheet. Bake in the preheated oven until browned, 15 to 20 minutes, stirring occasionally in order to brown evenly. Remove from oven and sprinkle with Parmesan cheese. Return to the oven to allow the Parmesan cheese to brown, about 5 minutes. Serve immediately.

I tried them years ago. they were fine. I thought they were a lot of trouble to peel though, as I recall. a lot of waste, and they aren't cheap where I live.

I have some in the fridge right now-- I'd describe them (once peeled, which is sort of a pain) like the inside of a broccoli stem, if anyone bothered to peel that
You can eat them raw or cooked, and the leaves are edible too! I like to buy them and eat the leaves right away, they don't hold well like kale does... just remove the rib, and chop up the leaves, and you can sautee or use them like you would spinach (I recently chopped, fried, and put into a quiche). The bulb-- peel, and slice. Eat raw, they can be a little sweet so you can have with PB like you would an apple. Cooked-- you can boil/steam, I like to do them in matchsticks and fry with butter till a little bit brown Nice for variety! |

I did the matchsticks last night-- I have a cheap mandoline (fox run I think is the brand) and I used the wider rather than thinner matchstick-- have to use the handguard too b/c you could totally remove a lot of skin with this thing!
Anyway-- fried them up in some butter/oil mix (had just fried some salmon burgers) and added just seasoned sea salt (herbemare brand) and ground pepper. I made 4 and DH and I each ate 2-- they were sort of medium small ones. Totally delish! OH-- and I tested my peelers-- I have a regular Oxo good grips one, and I have one that is similar but with a serrated blade (supposed to be good for tomatoes and peaches)... I liked the serrated one on the kohlrabi a bit better, but both worked. Not much more work than peeling a potato or carrot used to be |

I have a packet of kohlrabi seeds sitting right in front of me. They are pretty easy to grow, but they do like cool weather.

I use Kohlrabi in place of broccoli, either raw or cooked (doesn't seem to have the same digestive issues as broccoli. I think it has the taste of broccoli stems. It also puree's pretty good for soups and mashed with heavy cream and cheese.

I love Kohlrabi raw. Peel, slice into "sticks" and dip in Ken's LC Buttermilk Ranch dressing. It's a great veggie to take to work when I'm worn out on salad. Of course I like it shredded IN a green salad too!

Don't forget to eat the leaves (cut out the stems/ribs) if you get a bunch with nice big green leaves on them!

I bought a Daikon radish and a kohlrabi and finally got to test taste them side by side.
Kohlrabi has the milder flavor in my opinion..I added both veggies to a crockpot roast.. Kohlrabi potato salad anyone??? |

This is an old post I discovered when I googled Kolrabi. Just bought one at the farmer's market on my way to work this morning. I wish I knew that you could eat the leaves, because I broke most of them off and threw them away. It was awkward carrying the bag with the big leaves sticking out the top.
I hope I found another thing to enjoy. Can I cut up part of the bulb and save the rest for another day, or will it get yucky? |

I've never done that. We usually eat several in a meal. No raw leftovers. I've stored some that we're fried in fridge and reheated though.

I take mashed kohlrabi and mix with a little canned pumpkin, and add melted butter. Then I mix with cooked ground sausage and sf maple syrup. It's a great breakfast food! I used to make up a bunch, layer it in a Tupperware, and then just grab one every morning on the way to work.
I'm mad now because I moved and can't find them ANYWHERE! You would think, living in the freakin salad bowl of America, that it would be easy.... |
