Chocolate Dipped Strawberries for Valentine Day

I am looking for a tried and true way to make LC dipping chocolate
for some beautiful long stemmed strawberries. I want to surprise
DH for tomorrow. I am posting the only one that sounded reasonable.

Dark Chocolate
Dark chocolate is over 70 percent cocoa. This delicious treat easily fits in a low-carb diet. Three squares of dark chocolate equivalent to 30 g provide 179 calories, 13.8 g carbohydrates and 3.3 g fiber, for a total of 10.5 g of net carbs.

Chocolate-Dipped Strawberries
Chocolate-dipped strawberries make an elegant low-carb dessert. Begin by melting your favorite dark chocolate that has over 70 percent cocoa, and mix it with a bit of heavy cream. Dip each strawberry in the chocolate and place on parchment paper until the chocolate sets. Each serving of five strawberries prepared with two squares, or 20 g, of dark chocolate and a teaspoon of heavy cream provides 147 calories, 11.7 g of carbohydrates and 4.2 g fiber, which corresponds to only 7.5 g of net carbs.

I don't have a better recipe, Barbo, but I do this every so often. I just melt a Lindt 85% chocolate bar and roll the strawberries around in it. It's got a bite if you aren't used to that high a percentage of chocolate but we like it, or I should say I do. I've added a touch of stevia before for hubby. Lay them on the parchment and put in the fridge for a few minutes. ohhh, I love them so.

I know Kevin did dipped strawberries once. I think it may have been in a choc. chip thread.

I used to do this a lot. I would dip the strawberries in the unsweetened chocolate and then drizzle them in white chocolate. Superb.

I made a bunch on high-carb/high-sugar ones for my stepson and husband just yesterday. Stepson is thin as a rail and husband can tolerate more carbs than I.

I bought a big box of strawberries at Sam's on Saturday and then I bought chunks of milk chocolate from Ole Kentucky Candies, my favorite chocolate by far. They both declared them better than any purchased from the store.

The only taste I got was when I licked the chocolate from my fingers when I got a little messy and after not eating anything sweet for so long it was almost sickening.
