Every time I make these I'm blown away at how awesome they are. I made them a few days ago. Hands down, the best waffles I've had. Low carb or not.

I made these waffles tonight for dinner. The only changes I make are that I don't use any sweetener and I use Carbquick instead of Vital Wheat Gluten. I didn't tell DH that they were low carb. He usually likes my cooking, but if he doesn't, he'll probably say, "Is this some of your low carb stuff?" Anyway, he just raved on about how great they are! After dinner, he bagged what was left and said it was just enough for his breakfast sometime. I had been planning on leftovers for ME!

I've been avoiding making these waffles for years because the ingredient list looked totally gross to me. Recently, my cousin challenged me to make them, however, and I was pretty thrilled. I used a George Foreman grill with waffle plates, so the recipe made about 4 giant waffles, each more than 400 calories. (Wasn't thrilled with that part. Will have to see what I can do to tweak it.)

I didn't have VWG or Coconut flour on hand, so I used KevinPA's carbalose flour mix. The waffles themselves were extremely tasty--and had the perfect texture of a waffle. Crispy, tender, delicious...but more filling than a normal waffle might be. My only complaint is that they were too salty (and way calorific).

I suspect the salt is in the cheese, so I'm not sure what to do about that. As for the calories, I think I'll replace the cream with water next time and maybe use a non-full-fat cream cheese. With the mozzarella, these should already have a high enough fat content to make them crisp up the way they do.

However, they were great and I will be making them again.

P.S. I have nothing against fat. I do, however, have to watch calories even on low carb. Sucks.

Dry run for Mother's Day Breakfast (she has diabetes)! Waffles were delicious! My girls ate them and didn't suspect a thing! They were light and fluffy. I will probably pop them in the oven to get them a little "crispier/drier" next time. Thanks.

I tried making these with coconut flour in place of the vwg and they came out paper thin and eggy. I used 1/4 cup like PaminKY posted. I ended up adding some vwg to the batter and those ones came out fine.

Has anyone ever figured out the nutrition for BettyR's Amazing Waffles? Calories, fat, protein??? If it's been posted somewhere, can you direct me to it?

I made these for dinner the other night. I didn't have any cream cheese, so subtituted a carton of Fage 2% Greek yogurt (7 oz.) instead. I put everything else in the food processor, whirled til smooth, then just pulsed in the yogurt at the end so as not to break it down too much.

They turned out fine and of course it reduced the calories by about 600 for the batch! I got 10 waffles, and by my calculations, they're about 107 calories each and 10.9 grams of protein each!

Didn't figure the carbs up at the time, sorry....

Did you ever make a low carb recipe that everybody raves about and wonder what the fuss was about? This is NOT one of those recipes. OMGoodness!!! Why, oh why, did I wait so long to make these? I think this may be my all time favorite low carb recipe. Not just as good as regular waffles, but in my opinion? Better!

So light and crispy mmmmmmmm. The first couple that I made were a bit floppy, so I took the advice of others and left them in a bit longer. The result was pefection.

I have waffles in the freezer for a week of breakfasts. Unless, of course, the lc chocolate ice cream in there wins out and I make an ice cream and waffle sandwich. My knees are weak just thinking about it!!!

Thank you soooooo much BettyR!!! And thank you, Barbo, without this thread don't know that I'd have run across these!

I always use the coconut flour and I love these but I've never made them with the VWG so I have nothing to compare to but I also add 1/2 tsp glucomannan.

Made these this morning with coconut flour - which is a little fragile - instead of VWG.

DH and I think this is THE BEST recipe. I would serve these to anybody - they are absolutely delicious.

I did add 1/2 tsp. glucomannan. I might add a tish more next time, but they were delicious no matter what!
