No kidding, Soobee. We love it too. My DH won and I made this again this last week. I use a mandolin to slice the chayote quite thin and then boil about 12 minutes until tender crisp; I also have no watery issues. I use my GF bake mix in place of the Carbquik. Your method sounds good, Soobee. How long did you have to microwave the chayote - did you do it all together in one casserole dish? Curious me.

Never tried it with the chayote yet but I have done traditional scalloped potatoes in my crockpot all day. No flour needed for thickening. The heavy cream thickened perfectly. I would think if it's going to cook all day, precooking may not be necessary. Unsure tho.

Jen, I microwaved 3 good sized sliced chayotes for 18 minutes all at once. I wanted them completely done to get some of the liquid out of them. When I assembled the casserole, I only baked it enough to warm it through and melt the cheese. It was essentially done before it went in the oven. And, boy is it yummy. I don't think a high carber would know that it wasn't potatoes. But it's been so long since I've eaten potatoes.

LOL Soobee, it is a bit different to real scalloped potatoes, but I think it is nicer! Bonus that chayotes are so low in carbs. Barbo has some latkes (like potato pancakes) that she makes with chayotes that I also want to try.
Thank you for your microwave directions. Julie, you need to give this a try. Very good. I agree Barbo is an amazing cook. |

OMG - I made this tonight!!! WOW. So delicious. I think I may have overcooked the slices of chayote, but it was still wonderful.
