i made these this morning. i got 5.5 rolls. i plopped them into a muffin top pan.
i ate 1.5. my tummy isn't so happy about that....it's talking back to all the fiber, me thinks. next time i make them, i till try just using 2 T oat fiber and make up the difference as alm flour. i really love oat fiber though. not sure why the noisy, gurgly tummy, though. i used erythritol for the splenda. could it be that? it feels just like it does when i eat too much sf chocolate. they tasted so yummy! |

I made these this evening (with tweaks of course -- I'm another tweaker).
I used coconut oil. " " vanilla Protein Pwd. 1/4 c flaxmeal 1/4 c almond meal Erythritol instead of Splenda I did use the X gum, but also added 2 TBsp Chia gel (I'll probalby use more next time I make them, and maybe even a little water, as I'm not forming them on a sheet. I'd like the batter even a little thinner than I had it tonight.) & I used the VWG, baking pwd (scant), vanilla, eggs, & oat fiber. Used vanilla DaVinci I used part mozerella & part cheddar/jack cheese. I used 4 mini bunt pans, and 1 mini cake pan (hoped to get 6, but couldn't). I'll thin the batter more next time, and might be able to get that 6th one, but maybe not. Also, I have some sweetened cinnamon made up (more cinnamon to sweetener than Skeeter did, we like more cinnamon), so I just added some of that to the melted butter for the cinnamon mixture for the middle. I had a little that I didn't spread in the 5 "rolls", and I just added pwd Erythritol & a little water to that for the icing. Quite good! Thanks Skeeter!

I made these the regular way..but used molasses/Splenda cuz I didn't have diabetisweet on hand. The batter was a bit thickish..Not like a cookie, but almost. I might add some
more fat next time.. But, they taste great. I froze my batch and will heat one up this morning. I do think a nice cream cheese frosting would be good on them, too. |

Carrie: I just ballpark cream cheese, softened, Splenda, touch of vanilla extract/almond extract.. It's really nothing fancy, but it works for me..

I have topped these with the cream cheese topping recipe from the cheese danish-but I added a little sugar free maple syrup. DH is not a cream cheese fan, but loves this.

Cream Cheese Frosting
4 oz cream cheese 3 T softened butter 1 t vanilla 1/2 cup heavy cream 1/4 cup sweetener 1 1/2 t white chocolate or vanilla sf pudding mix Beat butter and cream cheese together. Add the rest of the ingredients. Beat until fluffy. |

Cinnamon Love
Skeeter, just another hug for coming up with this version.
I am making double batch today.... I'm working on a real bran muffin with 3 grams carb. More testing needed. Soon as I'm satisfied I'll put up the recipe for y'all to tweak...I wonder how many carbs are in 24 raisins? Could cut them up like Carolyn does and add to each of the 12 muffins. |

i think my tummy issues from eating these was from the brown sugar diabetisweet.
i have eaten other things with the same ing and the only difference is the diabetisweet. but, my mom liked them so i'll use up what i have and give them to her. |

Ok, so what would you sub out for flax and almond flour per chance?
I have any kind of flour, fiber, or bran you can imagine! Including chia meal and gelled chia. |

I made these this morning and they are wonderful. I used 1/4 c almond flour and 1/4 c flax, subbed WPI 8000 for the VWG and used regular Diabetisweet since I didn't have the brown.
