In the kitchen with Rochester: Wings!

OK. Last night I was able to secure some time in the kitchen (supervised of course!). I've had a big bag of wings from GFS sitting in the freezer and wanted to take a crack at 'em. These were not the humingbird wings that I got from Little Caesars. These were pretty big. Not ostrich big, but plenty big.

I melted a stick of butter and coated both sides of the frozen wings (that were on a cookie sheet). Put them in at 350 for 30 minutes. Pulled them out, flipped them, brushed on some more butter, added salt, garlic powder and some Lowrey's Seasoning salt. 30 minutes later I flipped them again, re-dabbed them with butter, and put on another coat of the seasonings. Then I turned the oven up to 400 and stuck them back in for 20 minutes to really brown.

They were GREAT! I had a side-bowl of Franks RedHot sauce - but didn't dip them too much. I think some Blue Cheese dressing might have been a nice add.

So - assuming that I'm baking and not frying - what are some other great ways to prepare these things? I have the timing down - and feel that I'm ready to experiment! (if I can get my wife to let me in the kitchen again).

Dana Carpenders Heroin Wings-I put the seasonings in a large freezer bag and throw the wings in the bag to coat them-less mess.

"Heroin Wings
4 pounds chicken
1 cup grated Parmesan cheese
2 tablespoons dried parsley
1 tablespoon dried oregano
2 teaspoons paprika
1 teaspoon salt
˝ teaspoon pepper
˝ cup butter


Preheat oven to 350.
Cut the into drumsticks, tossing the pointy tips.
Combine the Parmesan cheese and the parsley, oregano, paprika, salt, and pepper in a bowl.
Line a shallow baking pan with foil (Do not omit this step, or you will still be scrubbing the pan a week later).
Melt the butter in a shallow bowl or pan.
Dip each drumstick in butter, roll in the cheese and seasoning mixture, and arrange in a foil-lined pan.
Bake for 1 hour.

Yield: About 50 pieces, each with only a trace of carbohydrates, a trace of fiber, and 4 grams of protein."

I have a bag in my freezer too that I need to use soon.....were your wings solid frozen or thawed when you started to bake them?

Ditto to the post above, and I'll add this note-- use the parm from the green container (or whatever you find) and don't spend $ on fresh parm for this kind of application!

This should help you stay LC on budget I think this coating is good on a lot of stuff, you could try to make nuggets (chicken, maybe pork), coated and baked.

Here are my favorite wing recipes:
Infamous Diet Coke Buffalo Wings -
Quote:
1 cup Franks Hot Sauce
1 can Diet Coke with Splenda
1 tsp cayenne pepper, or to taste
1 tsp ground black pepper, or to taste
1/2 tsp Thyme
1/2 tsp Garlic Powder
1 tablespoon soy sauce
1/2 TBS Dried Chopped Onions
Awesome Buffalo Sauce: (makes 8 or more servings)
Quote:
3 TBS Butter
1/2 cup Frank's Hot Sauce (or other wings' hot sauce)
1 tsp Apple Cider Vinegar
1 tsp Hot Sauce (Tabasco or Cholula)
1 tsp Splenda or Stevia Artificial Sweetener, granulated or liquid equivalent (optional)
Garlic Parmesan Wings Sauce:

1 cup butter
1-2 cloves of garlic
1 tsp onion salt
1/4 tsp black pepper
1/3 cup Parmesan cheese, grated

Bake your wings with a little salt and pepper. When done melt a 1/2 stick of butter and add minced garlic (as little or as much as you want, I like A LOT). Toss the baked wings in this mixture until well cooked, then transfer the wings to a plate and pour the butter/garlic mixture on top!

Just posted another Wings recipes in time for the Super Bowl -- Teriyaki Wings. My kids love this sauce even more than the hotter Buffalo Sauce.
