I just re-started Feb 8th, so I was so excited to see this thread. I have favorite recipes from before, but when I went to add them here, they had already been added.
This is an awesome thread that should be a sticky! |

Carolyn posted this about 4 years ago....LOVE these chips and just had them for lunch today. I use my Nordic Bacon Plate to microwave mine on.
Pepperoni chips: How To Prepare: Place pepperoni slices on a paper towel on a plate, and nuke for about a minute- to a minute and a half, usually it will stop sizzling sound when it is done. Let them sit a minute or two until they dry and get crispy. Great alone, or with cream cheese, dipping, etc... |

Here is a new method (well, new to ME) for cooking turkey. I bet it would work with chicken too. I'm eating a turkey now that I bought on sale in November and OMG, it's to die for.

Here's another one of my favorites:
Oven Baked Chicken by Charski Mix some mayo with some hot sauce - I like Frank's Red Hot Sauce, Chipotle Tabasco or Frank's Chile & Lime, but whatever you like. You want about a teaspoon of sauce to 1/2 cup mayo, more of less to taste. You can also use a packet of Ranch or Italian salad dressing mix if you don't like it hot, then thin with a bit of cream. Mix some crushed pork rinds with some green-can Parmesan cheese - about half and half. Again, I like the hot & spicy pork rinds for this, but we like stuff spicy, so use plain if you don't like spicy stuff. Coat the chicken strips in the mayo, shake off excess, then roll and press firmly into the crumbs. I put them right onto a foil-lined rimmed baking sheet. I like the Reynolds Release foil for stuff like this. Bake at 400* til browned and crispy. (25 min.? ) Serve with some Ranch or bleu cheese dressing for dunking if you want! Newbies: Make sure to use mayo, not Miracle Whip. I would probably avoid the salad dressing mixes too, unless your plan allows them. Honestly, the recipe is excellent with just the mayo and hot sauce. I like it better made with thinner breasts. Leftovers reheat very well in the microwave. |
