My Low Carb Irish Cream Experiment
I was never much of a drinker before LC. The only alcohol that I ever really liked was Baileys. I'm sure this can be tweaked further but my experiment was very yummy.
I used 1/2 cup HWC Monin Sugar Free Irish Cream Syrup ( I didn't measure, just added until it tasted right to me) By the way, Monin's Irish Cream is the best of all the Sugar Free Syrups I've tried. Its great but I still think it needs a bit of help so I also added 1 tsp imitation brandy 1 tsp Mexican Vanilla (My new favorite thing!!!! It beats regular vanilla hands down IMO) few drops of EzSweetz Poured over crushed ice and OMG, it was so deelish! Last edited by tulipsandroses; 12-23-2010 at 10:19 PM.. |

OK Here is my S/f Rasphberry infused Vodka
Take a saucepan and put in a fifth of vodka 2 cups of rasphberries ( fresh or frozen) 1 cup of sweetener ( sweetening to 1 cup or to your taste ) cook this on med heat for about 40 mins. Then take off heat and let cool. Strain this into a sealable bottle and put in a dark closet to use. You can drink this or use in cooking. It's really good in brownies and yellow cake. _____________________________________ S/f Kuhula 2 fifth's vodka 2 cups of sweetener ( or to your taste ) 4 Tablespoons chocolate syrup 4 Tablespoons instant coffee 2 Tablespoons vanilla mix this all together in a half gallon jar you can seal. I make this in the summer so it can marry for the holidays. You have to let it marry for at least a month before use. These are some of mine. I hope you enjoy. ![]() ![]() ![]()

Since we are at the season I made Irish creamtoday with coconut milk and
Coconut milk egg nog. Coconut Milk Egg Nog 3 cups coconut milk 1 can coconut milk with high fat content 8 egg yolks 1 cup sweetner your choice 1 tsp. xanthan gum Put all the milk in a large saucepan and xanthan gum then heat to a boil and whisk constantly. Then put egg yolks in a large bowl with sweetner then pour milk mixture in slowly then whisk it constantly while you are pouring it into the egg mixture. Then pour back into saucepan and bring it up to 170 degrees. This is so good and dairy free. Then I made s/f Irish cream using coconut milk. ![]() ![]() I used So Delicious coconut milk with 5 grams of fat for both recipes . The xanthan gum makes it thicker. I don't have gluc. but you could use that instead if you have it. A much smaller amount. Coconut milk Irish Cream 4 cups coconut milk 2 T. instant coffee 2 tsp. s/f chocolate syrup 1 tsp. xanthan gum 2 cups of Irish whiskey Pour milk, instant coffee, chocolate syrup, and xanthan gum in a large saucepan heat and let simmer for 5 minutes until it thickens. Take off stove and let it completely cool . After cooling then pour in 2 cups of Irish Whiskey. There you have it. I love them both. I hope you do . ENJOY!!!!!!!!!!!!!!!!! I hope the op doesn't mind. I can put it on a different thread if somebody wants me to. Last edited by rosethorns; 11-20-2011 at 11:58 AM.. |

They are so delicious Julie. I drink almond and coconut milk almost everyday and I just love the taste.
I let it get cold and tried to taste it and it was very thick , so I added 1cup more of coconut milk . I for got on the recipe that I added 1 tsp. of nutmeg. and 1 T. vanilla. Last edited by rosethorns; 11-20-2011 at 01:44 PM.. |

Thanks Esther, how long do these keep? In refrig, for the "cream" ones? Since I'm not much of a drinker? And DH doesn't at all? Maybe a month? Or a two week period, which seems more likely. Maybe I should mix everything but the "cream" and add that as I use the rest, maybe 1/3 cream of your choice to 2/3 alcohol mix. What do you think? Would the flavor be as intense?
Thinking on my feet here. . . |

Magnamater , it 's about a month for the cream ones. My Dh uses it in his coffee and in my tea during the season. Love it.
The last 3 questions, I'm not sure. Nikki2777 , hershey's sugar- free chocolate syrup. Mariagm , that recipe made with cream is a 1/2 cup of liquid strong coffee. Or you could use 2 T. of cystal/granual instant of into 1/2 c. water. |
