I am looking for LC main dishes that I can make and freeze.

Ideally I would like to cook once and eat 3(or more times).

What are your faves?

Eggplant or zucchini lasagna, cauli crust pizza, meatballs or meatloaf, pulled pork, roasted chicken, cheesecake muffins.

Do you need to freeze? When I make something, we eat it two-three times each in the next few days. Neither my husband nor I mind having something a couple of times when it's good! It's a lot more convenient when you can just reheat some and not bother with the freezing and thawing. I think the quality is better as well.

I like this way too, but would love to have enough to freeze a bit too.

Well I made a double batch of zuccini lasagna yesterday. Enough for 8-10 meals!!

Still looking at various recipes. I am roasting a chicken today and love Linda Sue's Chicken Pot Pie...but it is not recommended for freezing.

If I sub coconut milk for cream would that work?
