I am looking for LC main dishes that I can make and freeze.

Do you need to freeze? When I make something, we eat it two-three times each in the next few days. Neither my husband nor I mind having something a couple of times when it's good! It's a lot more convenient when you can just reheat some and not bother with the freezing and thawing. I think the quality is better as well.

Well I made a double batch of zuccini lasagna yesterday. Enough for 8-10 meals!!
Still looking at various recipes. I am roasting a chicken today and love Linda Sue's Chicken Pot Pie...but it is not recommended for freezing. If I sub coconut milk for cream would that work? |
