Kale Chips -- amazing!

I'm probably way late to the party with Kale, but I just bought my first batch last weekend, and decided to try this recipe. o.m.g. I had only planned to eat 1/3 of the batch, but ended up eating the whole thing!

Love, love, love these chips!!!

Lemon Kale Chips

1 bunch kale (prepared and washed)
2 tablespoons olive oil
2 tablespoons lemon juice
¼ teaspoon celtic sea salt
1. Preheat oven to 350°
2. Chop kale into ½ inch pieces
3. Place kale in a large bowl
4. With hands massage oil, lemon juice and salt into kale
5. Place kale on parchment lined baking sheet (I just used foil- worked great)
6. Bake at 350° for 10-15 minutes until kale is dark green and crispy
7. Cool and serve



Now that kale and I are BFF, I am off to search for other recipes.

I tried them. I wasn't that thrilled with them. They are best straight out of the oven. If they sit around at all they taste awful. I really wanted to like them, but I don't think I'll make them again.

We do them in the dehydrator - I just toss them with a little EVOO and dust with a little sea salt (not too much, dehydrating really shrinks the leaves and concentrates the saltiness!) and we LOVE them!

Collard leaves work well for this too.

They're not that expensive - I got a Nesco Snackmaster FD-35 on Amazon for $34.95 - money WELL spent. Been using it several years now without mishap. I like it because the heat comes from the top, not the bottom, which means nothing drips down into the motor.

They're really pretty fragile, I don't think they'll hold up to dipping, but they're so good on their own that I don't miss the dip.

they are a bit carbier than one would expect from greens though...

for example, 100 grams (about a 3 1/2 ounce serving) of

chard has a net of 2.14 grams of carbs,

spinach has 1.43,

for kale it's 8 grams net.

If a bunch is 10 ounces, that would be about 22 grams of net carbs.

This is weighed before cooking, of course! LOL

I loooove kale chips!

I make them just bu breaking some off the stem (maybe a loose cups worth)

drizzle with olive oil, salt, pepper and smidgen of garlic powder

bake at 350 just until they start to brown. Maybe 10 minutes?

I saw Giadi De Laurentiis make this a few days ago ~ just omit the potatoes



Potato and Kale Chips with Lemon Mayonnaise
Recipe courtesy Giada De Laurentiis


Chips:

* 3 large kale leaves
* Olive oil, for drizzling
* Kosher salt and freshly ground black pepper
* 1 (8-ounce) medium white potatoes, unpeeled
* 1 (8-ounce) medium sweet potatoes, unpeeled

Mayonnaise:

* 1 cup mayonnaise
* 2 tablespoons fresh lemon juice (from 1/2 a large lemon)
* 1 teaspoon lemon zest (from 1/2 a large lemon)
* Kosher salt and freshly ground black pepper


Chips: Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F.

Remove the thick stem from the kale and discard. Cut the leaves into 2 to 3-inch pieces. Put them in a bowl and drizzle with olive oil. Toss well. Arrange the kale in a single layer on parchment paper-lined baking sheets. Bake for 10 to 12 minutes until crispy and slightly dark on the edges. Season with salt and pepper, to taste.

Using a mandoline slicer or a sharp knife, slice the white potatoes and the sweet potatoes into 1/8-inch thick slices. Put them in a bowl and drizzle with olive oil. Toss well. Arrange in a single layer (without overlapping) on parchment-lined baking sheets and bake for 12 minutes. Turn the slices over and continue to bake, checking every 2 minutes until brown and crispy, about 6 to 8 minutes longer. Season the chips with salt and pepper, to taste.

Mayonnaise: In a small bowl, combine the mayonnaise, lemon juice and lemon zest. Season with salt and pepper, to taste.

Transfer all the chips to a large bowl and serve with the mayonnaise.

Cook's Note 1: Some potato chips will cook faster than others. Remove the chips from the baking sheets as soon as they become brown and crispy.

Cook's Note 2: The recipe can be doubled or tripled.

Finally got around to making these. I love Kale in soups but these chips were not too appealing to me.
