question for the legendary LINDA SUE...
I love reading your recipes. I am checking them out to find ones for my limited kitchen skills, and limited budget. Regarding your recipe for mushroom soup, as an example, when u say "ounces" as in 8-12 oz of mushrooms, do u mean by weight, or by volume? Love & Profits: FLATFERENGHI.

I ain't Linda, but the only thing that's measured in volume ounces in cooking is liquid or one sort or another. Otherwise, it's weight.
As an aside, since the specific gravity of water is one, an ounce of volume weighs an ounce too. And most liquids used in cooking are primarily water and have specific gravities not that far off one, so if you just weighed everything you wouldn't be far wrong. |

When I list "ounces" in a recipe, I always mean by weight. If the ingredient is something that could also relatively accurately be measured with cups, I usually list the equivalent cup measurement as well for those who don't have a food scale. I almost never list foods such as lettuce and other vegetables by the cup because it's nearly impossible to measure them that way unless the pieces are really tiny.

I'm just beginning with Atkins and I think my day one (today) went well - but I want to have more dinner recipes on hand that will entice my family too. Linda Sue, I poked just a wee bit at your web site and your recipes are EXCELLENT to see - read etc. I can almost
taste them! I actually just popped the Pumpkin Bake (Jody's?) in the oven 10 min ago and am excitedly waiting for that. Dinner is roast chicken and a side of braised spinach w onions and garlic. Dessert - pumpkin bake. Brkfast tomorrow: pumpkin bake! LOL Anyway, thank you for making your recipes public. Tabby |

Thanks, Tabby. I've been known to eat Pumpkin Bake for breakfast too. That's what's so great about most low carb recipes. Even the desserts are nutritious enough to make a meal out of. Pumpkin Bake sure beats Froot Loops or Pop-Tarts any day!

I look forward to trying out the afore-mentioned recipe, as well as others that are not too complicated for the likes of me. One other question that has been plagueing me. What can one use as a substitute for carb-quick, as I heard that it does have a salty aspect to it. FF
