Chipotle chiles in adobo sauce

I bought some of this for my beef carnitas recipe. Only needed two tablespoons. What else can I use it for? Think I can freeze it? The chipotles are whole so I had to chop them up for the dish that I made.

I freeze it all the time. It's so spicy that a little goes a long way. I spoon it into a small freezer ziplock bag and flatten it out so it's thin making it easy to break off a piece next time I need some. I do the same with tomato paste.

I usually drop little bits of it (and tomato paste as well) onto a saucer coated with Pam. When they are frozen, I put them in a ziplock bag. Pureeing a chipotle with a little sauce and some mayonnaise makes a terrific sauce for many things. You can add something like raspberry sugar free syrup and a bit of vinegar to make it a fruity/sweet and sour/chipotle mayo. Excellent!

I puree it and then freeze it in small servings too. I like to add it to Linda Sue's mexican chicken casserole!

It freezes well. I mix some into ranch dressing to serve with cheese shell fish tacos. I use some in homemade sweet hot mustard dressing for a salad or dipping. Chipotle mayo is great to make chicken salad. Stir some in softened butter with a bit of garlic and chill for compound butter for steak of chicken.

yup, I freeze them individually in little snack size baggies. Use one in a chili at a time . Got the idea from Charski!

Good ideas! Being sloppy, I've discovered that left overs in the can keep fine in the fridge for months (not sure why it lasts that long).

mine mold WAY too fast when I do this. I wouldn't bother freezing otherwise.

I whirl it up in a small food processor then put in one of those little Rubbermaid containers (small for dressing, 2-pack, holds maybe 1/4-1/3 cup) and put in the freezer. Then when I need some, I just dig some out with a spoon. Another way would be some small shaped ice cube trays - freezing in the small shape then put in a freezer bag.

This is what I USED to do, then I found it easier just to scoop the puree into a ziploc, smoosh it flat, and freeze, then break off whatever I wanted! But I'm lazy that way.

Chipotle goes great with seafood. I use it in a spicy fish and shrimp soup. I also have a recipe for chipotle BBQ shrimp that I havent tried yet.

Also chipotle is great for chicken wings


Oh and I have mine frozen in a ziploc baggie, works great.
